<p><strong><span style="text-decoration: underline">GRILLED POTATO DIPPERS WITH A TRIO OF SAUCES</span></strong></p>
<p>Prep time: 30 minutes</p>
<p>Cook time: about 30 minutes</p>
<p>Cost per serving: $1.71, including sauces</p>
<p>2 pounds russet potatoes, scrubbed and cut into wedges</p>
<p>1 tablespoon olive oil</p>
<p>Sea salt to taste</p>
<p>Sauces (see below)</p>
<p>Place potato wedges in a large bowl with olive oil; toss well to coat. Grill over medium-high heat for 10 minutes, turning once or twice, until lightly charred and cooked through. Season with salt and serve immediately with dippers.</p>
<p>Makes 6 to 8 servings.</p>

<p><strong>Red Pepper Basil Dipping Sauce</strong></p>
<p>1/2 cup fat-free Greek yogurt</p>
<p>1/2 cup roasted red peppers, drained and patted dry</p>
<p>2 cloves garlic</p>
<p>1/4 cup <span style="text-decoration: underline">each</span>: sliced green onions and basil leaves</p>
<p>Sea salt and freshly ground pepper to taste</p>
<p>Puree yogurt, peppers and garlic in a blender or small food processor. Add onions and basil and pulse on and off until finely chopped. Season to taste with salt and pepper.</p>

<p><strong>Caramelized Onion and Chive Dipping Sauce</strong></p>
<p>1 tablespoon extra virgin olive oil</p>
<p>1 medium onion, quartered and thinly sliced</p>
<p>1 cup fat-free Greek yogurt</p>
<p>1/4 cup sliced chives or green onion tops</p>
<p>2 tablespoons fresh rosemary leaves</p>
<p>Sea salt and freshly ground pepper to taste</p>
<p>Heat oil in a medium skillet. Add onion and cook over low heat for 20 minutes stirring frequently; let cool. Puree onion and yogurt in a blender or small food processor until smooth. Add chives and rosemary and pulse on and off until finely chopped. Season to taste with salt and pepper.</p>

<p>1 ripe avocado, peeled and pitted</p>
<p>2 cloves garlic</p>
<p>1/4 cup lightly packed fresh cilantro leaves</p>
<p>1/2 tablespoon lime juice</p>
<p>Sea salt and freshly ground pepper to taste</p>
<p>Puree yogurt, avocado and garlic in a blender or small food processor until smooth. Add cilantro and lime juice and pulse on and off until finely chopped. Season to taste with salt and pepper.</p>

1 cup KC Masterpiece® Original Barbecue Sauce
Dry Rub
¼ cup dark brown sugar
4 teaspoons garlic salt
4 teaspoons chili powder
2 teaspoons salt
1 teaspoon black pepper
½ teaspoon celery salt
¼ teaspoon red pepper
¼ teaspoon cinnamon
¼ teaspoon white pepper
Liquid Seasoning
½ cup apple cider
¼ cup apple jelly
¼ cup honey
¼ cup brown sugar
1 tablespoon dry rub mix (above)

<p><strong>Ingredients</strong>:<br />

<p><strong>Liquid Seasoning</strong><br />

<p>Remove the membrane from the back of the rib slabs. In a small bowl, combine the dry rub ingredients and mix well. Reserve one tablespoon of the rub for the liquid seasoning mixture. Generously apply the dry rub onto the front and back sides of ribs. Gently pat to ensure that the rub will adhere.</p>
<p>Build a charcoal fire for indirect cooking by situating the coals on only one side of the grill, leaving the other side void. Add a small aluminum pan to the void side of the grill and fill it halfway with water. When the charcoal grill reaches 250 degrees Fahrenheit, place ribs meat-side up on grill grate and cook over indirect heat for two hours and 15 minutes.</p>
<p>Remove the ribs from the grill. Place each slab meat-side down on its own doubled aluminum foil square. The foil should be large enough to completely wrap each slab. Mix the liquid seasoning in a small bowl. Pour ½ cup of the liquid over each slab. Then, tightly wrap and seal each slab with aluminum foil. Place the wrapped ribs back in cooker for one hour at 250 degrees Fahrenheit.</p>
<p>Remove the ribs from the charcoal grill, unwrap, and discard foil. Brush finishing glaze on both sides of the ribs. Place the ribs back on the grill for 15 minutes, or until sauce caramelizes.</p>
