If you’re not familiar with Corn Hole, the best comparison is to a game of horse shoes. Two wood boxes are set a fixed distance apart and teams of two try to throw a bean bag into a hole in the box. Landing on top of the box scores one point, and going through the hole scores three. You can cancel each others points out by getting the same thing on the same round (like horse shoes). It’s a fun game when you have family and friends together.

My son had a great Easter, the Easter bunny was good to him. Now we have to figure out what to do with all that extra Easter candy. How was your Easter celebration?

Add a colorful, nutritious touch to your spring holiday menu. This easy-to-prepare kugel, made with canned pineapple and carrots, as well as apples, cranberries and almonds, is the perfect side dish or way to top off your feast. And it’s another way to fit fruits and veggies in!

Spiced Pineapple Carrot Kugel

Ingredients:Vegetable oil spray
1 can (15 ounces) sliced carrots, drained
1 can (8 ounces) crushed pineapple in juice, drained
2 apples, cored and chopped
1/2 cup matzoh meal*
1/4 cup dried cranberries or raisins
3 large eggs, separated
1/4 cup slivered almonds, toasted
1 teaspoon cinnamon
1/2 teaspoon ground coriander

Preparation Time: Approximately 10 minutes

Cook Time: Approximately 60 minutes

Preparation:Heat oven to 350°F.

Coat an 8×8-inch baking dish with vegetable oil spray.

Combine sliced carrots, pineapple, apples, matzoh meal, cranberries, slightly beaten egg yolks, almonds, cinnamon and coriander in a medium bowl.

In a separate bowl, beat egg whites until stiff; gently fold them into the carrot-pineapple mixture. Pour into the baking dish; bake for 50 to 60 minutes, or until lightly browned.

Servings: 12

*Major supermarkets carry matzoh meal. At times other than Passover, breadcrumbs can be substituted if matzoh isn’t available.

I went to the local dollar store the other day to see what I could come up with on a budget for a cute Easter table decorations. I found a pack of glittery eggs, and some daisy flower lollipops both in bright Spring colors. The colors coordinated really well so I decided I would take them home and see what I could do.

At home I added an old flower pot, some floral Styrofoam, paper Easter grass from last year, some Robin’s Egg Candy, and some acrylic paints and brushes I had in my craft drawers.

I painted the flower pot a bright pink to match some of the other colors  in my dollar store finds. Then I painted little daisies on the pot to coordinate it with the flower lollipops I bought at the dollar store.

Next I cut the floral foam to fit inside the flower pot and put some of the Easter grass on top to hide the foam.

I arranged the flower lollies, and the eggs in the flower pot until everything looked in proportion. Then I dropped the candies into the grass.

Each finished table decoration or favor would cost less than $5, and would be easy to make. You can leave the pots one solid color if you don’t want to spend the time making flowers.

These would make great little table decorations, especially for a children’s Easter party. When the party is over you can send them home with the guests as party favors, or draw a couple names or numbers out of a hat and give them as door prizes.
