Quesadillas make great finger food for casual parties, and football gatherings. This Herb Portobello Quesadillo has a little flavor twist to make it extra delicious.

Grilled Herb Portobello Quesadilla

Cooking Time: 10 minutes
Servings: 4
Ingredients

4 Mission® Zesty Garlic Herb Wraps or Mission® 10″ Burrito Flour Tortillas
1/2 teaspoon Garlic Powder
1 tablespoons Fresh Rosemary minced
2 tablespoons Thyme, fresh
1/3 cup Onion finely chopped
1/2 teaspoon Salt iodized
1 teaspoon Black Pepper freshly ground
1/2 cup Olive Oil
4 large Portabello Mushrooms whole, cleaned, stems removed
3 cups Mozzarella Cheese, shredded
3 cups Gouda Cheese finely grated
1/4 cup Sun-Dried Tomatoes in oil
1 small Red Onion sliced, circles
1 bunch Fresh Basil whole leaves

Instructions

1. For marinade, combine garlic, rosemary, thyme, onion, salt, black pepper and olive oil, mix well. Pour over mushrooms and set aside for about 15 minutes.
2. Grill whole on barbeque until tender, about 4 minutes per side. Once cooked through and cool to touch, slice.
3. Top each wrap with equal amount of cheeses, sun-dried tomatoes, red onion, and basil leaves (about 4 leaves per quesadilla) and mushrooms – layering ingredients on just half of the wrap.
4. Fold the wrap over, creating a half circle, and grill on barbecue for about 2 minutes per side until golden brown and cheese is melted.
5. Slice each cooked wrap into 3 wedges. Serve.

Chips and dip are great, but why kick the standard chips and dip up a notch or two by making your own, and giving it a twist? Today I have a yummy mango dip recipe for you from Mission Menus.

It won’t take you long to throw together, and you can even keep the ingredients on hand in your cupboards for last minute entertaining.

Mango Tango Dip
Cooking Time: 0 minutes
Servings: 4

Ingredients:

• Mission® Extra Thin Chips
• 1 cup Black Beans can, drained
• 1/2 cup Mangoes jar, small chop
• 2 tablespoons Mango juice from jar
• 2 tablespoons Red Onion finely chopped
• 2 teaspoons Cumin ground
• 1 tablespoon Fresh Cilantro chopped
• 2 teaspoons Lime Juice

Instructions:

• Mash black beans, to a smaller size/paste, with a potato masher or use tines of a fork. • Add mangoes, mango juice, onion, cumin, cilantro and lime juice; combine evenly. • Serve cold with Mission® chips.

Avocados are easy to slice, just cut them in half, and pull out the seed. Then take a knife and dice the avocado while it’s still in the peel and then scoop it out. It’s that easy, especially when they’re nice and ripe. Yum!

The latest recipe to hit my party radar is a Southwest Taco Dip from Mission Tortillas. I’m thinking ahead to football and tailgate parties, when you need hearty, spicy, warm your insides party food.

Southwest Taco Dip

Recipe Ingredients:

• 1 bag Mission® Tortilla Strips
• 1 can Refried Beans
• 3 each Avocados peeled and chopped
• 2 tablespoons Fresh Lemon Juice
• Black Pepper to taste
• 1 1/4 cups Sour Cream
• 1 package Taco Seasoning Mix
• 1 each Small Yellow Onion chopped
• 3 each Red Tomatoes chopped
• 1/2 cup Sliced Black Olives
• 16 ounces Sharp Cheddar Cheese grated

Recipe Instructions:

1. Spread refried beans on a large serving plate.
2. Mash avocados in a separate bowl add lemon juice and pepper. Mix well and then spread over refried beans.
3. Combine sour cream and taco seasoning mix. Spread over refried bean mixture.
4. Top with tomatoes, onions, olives and cheese.
5. Serve with Mission® Tortilla Strips.

Simply Irresistible Blue Cheese Dip

Prep : 10 minutes

Makes: 2 cups

1 container (8 ounces) reduced fat vegetable cream cheese, softened

1 cup reduced fat sour cream

1 cup crumbled blue cheese (about 4 ounces)

1 teaspoon garlic powder

¼ teaspoon freshly ground black pepper

1 teaspoon minced fresh parsley

1 teaspoon minced fresh dill weed

Pepperidge Farm® Baked Naturals Savory Cheddar Pretzel Thins

1. Place the cream cheese, sour cream, blue cheese, garlic powder, pepper, parsley and dill into a medium bowl. Beat with an electric mixer on medium speed until the mixture is blended.

2. Sprinkle with additional parsley. Serve with the pretzel thins for dipping.

Lemon Basil Hummus Dip

Prep : 10 minutes

Makes: 1 ⅓ cups

1 can (about 16 ounces) chickpeas (garbanzo beans)

5 large fresh basil leaves (about 1/2 cup)

1 clove garlic, peeled

1 tablespoon lemon juice

1 tablespoon olive oil

¼ teaspoon ground black pepper

1 teaspoon soy sauce

Pepperidge Farm® Baked Naturals Toasted Wheat Wheat Crisps

1. Drain the chickpeas, reserving 1 tablespoon liquid. Rinse the chickpeas.

2. Place the chickpeas, reserved liquid, basil, garlic, lemon juice, oil, pepper and soy sauce into a food processor container. Cover and process until the mixture is smooth. Serve with the wheat crisps for dipping.

Southwestern Caviar

• 2 (15 oz cans) black beans, drained and rinsed
• 1/2 cup chopped green onions, bulbs and green tops
• 1/2 cup diced green bell pepper
• 1/2 cup diced red bell pepper
• juice of one lime
• 1 tablespoon plus 1 teaspoon olive oil
• 1 jalapeno, stemmed, seeded, and chopped ( for a spicier dip leave the seeds in)
• 1 teaspoon chili powder
• 1 teaspoon of salt

In a large bowl toss all the ingredients until evenly mixed. Serve with Tostitos(tm) Scoops, or other Frito-Lay chips for dipping.

I think I originally got this recipe from Emeril Live. I think I’ve made a couple adaptations to it since then (tweaked it a little to suit my own tastes). These wings make wonderful party appetizers.

Buffalo Chicken Wings
20 chicken wings (you can also use chicken breast strips, or boneless breaded chicken chunks), washed and patted dry.
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground pepper
1 teaspoon cayenne pepper
1 recipe buffalo wing dipping sauce, recipe follows
Blue Cheese, or Ranch dressing
Place chicken wings into a large, zip-top plastic bag. In a small bowl, combine the flour, salt, pepper, and cayenne pepper. Add the flour mixture to the plastic bag and toss with the wings to coat well.
Pour the chicken wings and excess flour onto a baking sheet and spread evenly. Allow the chicken to sit on a floured baking sheet to dry out for about 1 hour.
Preheat a large stockpot filled halfway with vegetable oil to about 350 degrees F.
Add chicken to hot oil and fry until cooked crispy and thoroughly cooked, about 10 to 13 minutes.
Place the wings on a large cookie sheet and drizzle with half of buffalo wing dipping sauce. Toss and coat well. Serve hot with the remaining dipping sauce and Blue Cheese or Ranch dressing.

Buffalo Wing Dipping Sauce
1 cup hot sauce (Frank’s is great)
1 cup (2 sticks) melted butter, at room temperature
1 teaspoon freshly squeezed lemon juice
2 teaspoons dried basil leaves
Combine all the ingredients in a large bowl and set aside until your ready to use it.
Makes about 2 cups

Here’s a really cute idea from Wholly Guacamole.

Football season traditionally means tailgate time, play-off parties and a table of unhealthy dips loaded with calories–70 per tablespoon for spinach dip and a whopping 90 per tablespoon in buttermilk ranch. With Americans deriving an estimated 30 percent of their daily calories from outside traditional meals, the trend in party fare is to serve healthier options. At just 25 calories per tablespoon, adding pre-made, all-natural guacamole to the party line-up makes a game-time winner.

The Recipe:
Wholly Guacamole Gridiron Game Time Dip       
Prep: 30 minutes 

Ingredients
- 1 Tbsp butter
- ½ cup red bell pepper
- ½ cup onion, chopped
- 2, 15 oz cans black beans, rinsed / drained
- 2 tsp fresh chopped jalapeno peppers
- ½ tsp ground cumin
- 1 cup salsa
- 2 cups cheddar cheese, shredded
- 14 oz Wholly Guacamole
- ½ cup sour cream
- 1 bag tortilla chips

Instructions:
1. Melt butter in skillet; add peppers and onion. Cook over medium heat until onion is softened. (4 minutes). Stir in beans, jalapenos and cumin. Cook until heated.

2. Transfer 1 cup of bean mixture to a food processor, process until smooth. Return blended mixture to remaining mixture and stir to combine. Spread onto an 11×8 baking dish. Cover and refrigerate at least 2 hours.

3. Just before serving, layer over the bean mixture: salsa, cheese and top with Wholly Guacamole.

4. Spoon sour cream into resealable plastic bag. Snip off small corner and pipe sour cream lines over the guacamole to resemble yard markers on a football field.

Why should the host do all the work? If you really want your guests to get in the spirit of things, have them dress up in costumes appropriate to a Super Bowl party.

Ideas include dressing as a favorite football player, cheerleader, referee and even that one guy who shows up to the game wearing no shirt and the team’s logo painted on his chest. Bet your guests go all out for this one!
