I am having a good time using the Aromatica Organic spices and seasoning blends. I just love how convenient they are. They can be marinades or rub on meats, and seafood, or as sprinkled seasoning on any dishes. I use 1 packet of the Caribbean Jerk spice for leg quarters the other which turned out really good. A little spicy but I like my food that way.
INGREDIENTS:
3-4 chicken leg quarters
1 packet of Aromatica Organics Caribbean Jerk
Preheat the oven to 355°

Baked Lime & Red Wine Vinaigrette Chicken

Another baked chicken recipe using basic ingredients found in your pantry and fridge. One of them is actually a salad dressing. I love simple yet delicious dinners like this.
INGREDIENTS :
3-4 chicken pieces (thighs, legs or quarters)
juice of 1 lime
3 tbsp of Red Wine Vinaigrette salad dressing
2 tbsp soy sauce
1 tsp of Worcestershire sauce
sprinkle of black pepper
sprinkle of dried parsley
sprinkle of red pepper flakes (optional)
Except the chicken, combine everything in one bowl and whisk together. In a container with a cover, put the chicken in, then pour the marinade in, coat both sides to incorporate the marinade on the chicken pieces. …read more
Baked Lemon-Scallions Chicken

If you like lemon flavored dishes once in a while, here’s a chicken recipe that you might like. Well I hope so anyway. A simple lemon marinade will do the trick.
INGREDIENTS :
5-6 pcs of chicken thighs
juice of 2 lemons
2 sprigs of scallions, chopped finely
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
Put the chicken pieces in a large ziploc bag.
Combine the lemon juice, scallions, garlic powder, salt and pepper. Pour over the chicken, and massage the chicken and marinade together.
Marinate for 3-4 hours or overnight. Bake it in the oven (355°) after marinating for about 35-40 minutes.

Mojito-Key Lime-Cilantro Chicken

I have a few leftover stalks of cilantro that would probably go bad in a few days so I decided to chop and add them up in a mojito-key lime-marinade I was making for the chicken. Check out the recipe below. It’s easy to make and it’s delicious.
INGREDIENTS :
6-8 pieces of chicken (legs, thighs)
few stalks of cilantro, finely chopped
1/4 cup of Captain Morgan’s Mojito drink
juice from 8 key limes
2 tbsp olive oil
sprinkle of salt and pepper
