Usually once a week we have Mexican night, sometimes it’s taco or burrito night, once in a while it’s loaded nacho, or enchilada night. When I was at the grocery last night I grabbed everything I need to make enchiladas later this week, and I think I’ll have enough left over soft taco shells to have soft tacos one night too.
Mission Tortillas has the easy beef soft taco recipe I posted below. They also have a ton of other great recipes for Mexican night, and some recipes that would work great for football game day. Yum!
