Fresh Blueberry and Cranberry Relish

High in antioxidants, blueberries are often considered one of the top “superfoods” by doctors and nutritionists. They contain fiber, vitamin C, potassium and more antioxidants per serving than green tea or red wine. Studies show that blueberries improve brain function, help lower the risk of heart disease and cancer, and contain anti-inflammatory properties.
This year, when making Thanksgiving dinner, reach for blueberries. A new twist on cranberry sauce, this blueberry-cranberry relish will soon be a family favorite!
Ingredients

1 cup fresh blueberries
1 cup fresh orange juice
8 oz. fresh cranberries
1 tablespoon orange zest
3/4 cup sugar
1 tsp. vanilla

July is National Blueberry Month

Blueberries are in peak season during July. You can find blueberries everywhere this time of year, and at a low cost, or even free if you grow your own. While they’re in season you may want to make sure you freeze a few for later in the year when the price goes back up. The price for blueberries off season is more than double the price of in season.

Everytime I turn around I see a new healthiest foods list. On almost every list I see, the tiny blueberry is at or near the top of the healthy food chart. For such a tiny little fruit, blueberries pack a mighty punch.

I’ve discovered Cyndi’s Busy Family Meals blog (another b5media blog) and enjoy her quick recipes.  I’ve written a “Country Kitchen” cooking column for years and have explored various types of foods and cooking.  I find now I search for recipes and meal ideas that are quick to prepare and lend themselves to a very busy lifestyle.
