Roasted Cauliflower and Cheese for Passover

Keeping Passover guidelines and overall Jewish Dietary Laws in mind, Cabot Creamery, the cheese maker, has created a new Passover recipe made with their Kosher Sharp Cheddar: Roasted Cauliflower and Cheese. They were kind enough to share it with Blisstree readers:

Roasted Cauliflower and Cheese
Makes 16 servings
1/4-cup extra-virgin olive oil
5 to 6 cups cauliflower florets, about 1-1/2 inches in diameter
(1 medium head)
1-teaspoon salt, plus more to taste
1/2-teaspoon ground white pepper, plus more to taste
1 tablespoon sliced garlic
2 sprigs fresh thyme
1/2-cup grated Cabot Kosher Sharp Cheddar

Cooking for Passover

Passover, the Jewish festival that celebrates the Jews’ exodus from slavery in Egypt, begins on April 19 (2008) at sunset. The eight-day celebration is marked with prayer and meals with family and friends.
Food is an important part of the Passover celebration, but there are strict guidelines that can make cooking for the Passover meal a little challenging. Certain foods are prohibited, including:

leavened bread
cakes and crackers
cereal
wheat, barley, oats, rye
corn, millet
