One of my favorite things about fall is the excuse to use pumpkin for pretty much anything. From muffins to cakes to breads and even cheesecake, you can add pumpkin to pretty much anything.
Whether you make this for dessert for Thanksgiving (a nice twist on traditional pumpkin pie) or even sooner for a Halloween party or other get-together, it’s sure to be a hit and may even convert those who don’t like pumpkin pie (I can’t even imagine!).

Pumpkin Cheesecake

One of my favorite things about the changing seasons is dusting off recipes that are season-specific. This one for pumpkin cheesecake is one of my favorites (along with chocolate zucchini cake and pumpkin cookies!) and makes a great alternative to a regular pumpkin pie.
The recipe makes 16 servings and keeps well in the refrigerator for a few days, providing it even lasts that long! You could dress it up even more with a dollop of whipped cream or a light drizzle of chocolate sauce.

We spied this multi-flavor cheesecake from our peripheral vision while ordering my daughter’s birthday cake at Wal-Mart’s bakery yesterday. It was just too good to say no to.
A cheesecake with different flavors. Buying this already made cheesecake is very convenient for parties where you have no time to make dessert anymore. It’s even more convenient because the different flavors will sure please anyone at the table. They can either have triple chocolate, strawberry swirl, caramel swirl or NY cheesecake flavors.
This is good to bring to potlucks also. Everyone will appreciate the different flavors and how pretty the whole cheesecake is. …read more

How were your sugars over the holidays? Have you been steady or have you had a sharp increase? Have you behaved and kept to your diet and nutritional tactics? So many questions, so little time! Keep me posted.
Personally, I did have a sweet here and there but nothing over the top. I guess I am lucky in that I only have a sweet spot for the ol’ cheesecake haha. I did eat a few cookies, peanut butter of course, but that was the extent of it. I guess you could say that I have been pretty good or at …read more

Happy Monday to y’all! I don’t have a whole lot of new diabetic news today. There was no new medication nor research studies published in the last few days, after all it is vacation season, right? And I don’t have too much to offer in my personal diabetic life, except I think I ate an entire cheesecake this weekend thanks to one of my good friends, Debbie. By the way, you would have to as well, it is the best home made cheesecake in the entire world, and I get to eat about 2-3 times a year, …read more

So, I received some samples of a new organic frozen food product. I am suppose to be giving them a try. They are not available on the east coast as of yet, but I would assume that they will be expanding their services. I plan on doing a full write up on the product after my family gets through more of the flavors that were sent. My hubby ate the ginger chicken with beans and some type of whole grain rice like product the other night.
Why did I not taste it myself you ask? Well, …read more
