Chicken Cacciatore

Chicken cacciatore is a classic Italian dish typically made with chicken, mushrooms, onions, garlic and various spices including thyme, parsley, and oregano and served over pasta or rice. It’s referred to as a “hunters stew” and in the past has also been know to be made with rabbit.
Though not traditional, more modern preparations of the dish include chopped tomatoes which results in a sauce instead of the gravy that the chicken on its own produces.

Baked Chicken Wings Adobo

I have made chicken wings adobo before but they weren’t as good as the ones I made last night. I think it had something to do with how I treated the meat. Before, I would just simmer the wings with the adobo sauce until tender the way I make pork adobo. Most of the time the chicken wings were so tender that the meat were off of the bone.
Last night I wanted to actually have the wings. I found a way of having the chicken wings intact by baking it first.
INGREDIENTS:
10 chicken wings
1 cup of flour
4 cloves of garlic, finely …read more
Roasted Chicken With Potatoes

I roasted a whole chicken yesterday. When I was a newlywed, I roasted a lot of whole chickens. They were economical and I liked the presentation of a complete browned bird, but eventually I fell for the ease of using chicken breasts and tenders.
I used a 3.5 lb bird and a dry rub featuring smoked paprika and a little cumin. The house smelled incredible as the chicken roasted.
Roasted Chicken With Potatoes
Ingredients:
* 3.5 – 4 pound whole chicken, cleaned, be sure to loosen skin from breast and rinse well
* 4 potatoes, cut into rounds or quarters, about 1 inch thick

Cheesy Chicken Enchiladas

Coriander is the seed that Cilantro grows from. The ground seed has a sort of citrus tang to it. When I was first married my specialty was a creamy Enchilada dish that featured a sauce flavored with Coriander.
I use chicken that I’ve previously stewed myself, but if you’d rather, you can use 3 cups of diced leftover chicken and 3 cups of chicken broth. I use a lowfat sour cream and a low fat monterey jack cheese to cut down on the fat with this dish, but it is not necessary for you to do so.

Penne Chicken with Sun Dried Tomatoes

This recipe for Penne Chicken with Sun Dried Tomatoes is probably my husband’s most favorite meals. I found it in a cooking magazine last year and ended up changing it so much that I had to write it down separately or else I’d never remember what all I had ended up changing — and that, to my husband at least, would have been a travesty!
It does rely on pre-canned and pre-packaged foods, so we don’t make it very often and when we do it’s only if something’s on sale. You can definitely substitute the pre-packaged chicken for a some leftover …read more

I am having a good time using the Aromatica Organic spices and seasoning blends. I just love how convenient they are. They can be marinades or rub on meats, and seafood, or as sprinkled seasoning on any dishes. I use 1 packet of the Caribbean Jerk spice for leg quarters the other which turned out really good. A little spicy but I like my food that way.
INGREDIENTS:
3-4 chicken leg quarters
1 packet of Aromatica Organics Caribbean Jerk
Preheat the oven to 355°
Sprinkle the Caribbean Jerk seasoning on the chicken. You’ll need to rub ‘em all together to coat each …read more

I’m so excited that it’s finally September! It doesn’t necessarily mean cooler weather where I’m at (that’s October), but I do like that it’s finally pulling out of the “dog days” of summer and that cooler nights and shorter days are on the way.
September is also the bearer of several food holidays! I couldn’t figure out where most of these originate, and chances are good that even though they say “national” holidays they’re usually not. That doesn’t make them any less worthy of being recognized and celebrated, though! September is:

I needed to use the last zucchini that I bought from the Farmer’s Market but not necessarily as a vegetable side dish for meat entrée. I felt like making a one-pot meal so I decided to incorporate the zucchini with a box of penne. A delicious Baked Penne With Bacon, Chicken & Zucchini was my masterpiece .

a box of penne, cook al dente
5 pieces of bacon, sliced in small pieces
2 boneless chicken breasts, cubed
3 cloves of garlic, chopped finely
1 sm can of cream of mushroom soup
1 cup of water

There are days when my brain sort of stops functioning and couldn’t for the life of me get things together. It usually happens when I wake up really late that I am just barely getting through all the tasks at hand. That’s when it’s hard to think of what to make for dinner. I keep rushing to get things done that I forget to plan what to cook. Boneless chicken breasts and a well-stocked pantry usually come to the rescue.
I had to that the chicken in the microwave of course and just combining herbs and sauce together in a …read more
