Mint Chocolate Chip Cookies

I live down the street from a Great Harvest Bakery. I love their bread, but what I really loved was their Mint Chocolate Chip cookies. I stopped by the other day and they were out. In fact, not only were they out, but the friendly lady behind the counter told me that they are no longer making them. Ouch.
I left with a pumpkin chocolate chip muffin and a strong desire to figure out my own version of that cookie recipe.

Chocolate Snickerdoodles

Many people seem to love snickerdoodles as much as Rachel and I do. We have already talked recently about traditional snickerdoodles, as well as coconut snickerdoodles.
Here are two other recipes for different versions of the classic snickerdoodles. The first one uses cocoa. Do you think you’d like chocolate snickerdoodles? The second uses applesauce. I have found that kids LOVE the applesauce ones.
Chocolate Snickerdoodles
Ingredients
1 1/2 cup sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
2 eggs
2 cups flour
3/4 cup cocoa
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
2 Tablespoons sugar

Cocoa Drop Cookies

With Christmas fast approaching, cookie recipes are being shared all around the world. Some of my favorite cookies that we had in our family growing up were cocoa drop cookies. These puffy, cakey cookies offer just the right amount of cocoa goodness. Not too chocolately at all… just right.
Ingredients
6 Tablespoons butter
1 cup sugar
3 Tablespoons cocoa
3 eggs
2 cups of sifted flour
1/4 teaspoon of salt
2 teaspoons baking powder
1 1/2 Tablespoons milk
2 teaspoons vanilla
Directions
Cream butter and then slowly beat in sugar and cocoa.
