		<description><![CDATA[Weekend is my usual days to cook using the Crockpot. I prepare the meat after eating breakfast or brunch which is usually about 9 or 10am. Once the Crockpot is cooking I could relax or spend quality time with the family. I know that we&#8217;ll have dinner by 5pm. This past weekend I decided to cook beef roast with potatoes. 
INGREDIENTS : 
3 to 4 pounds of beef roast
1 tsp of olive oil
sprinkle of dried oregano
sprinkle of dried basil
sprinkle of dried parsley
sprinkle of dried thyme
sprinkle of dried rosemary
sprinkle of garlic powder
sprinkle of salt and pepper
1/2 cup of water

<p><strong>INGREDIENTS : </strong><br />
3 to 4 pounds of beef roast<br />
1 tsp of olive oil<br />
sprinkle of dried oregano<br />
sprinkle of dried basil<br />
sprinkle of dried parsley<br />
sprinkle of dried thyme<br />
sprinkle of dried rosemary<br />
sprinkle of garlic powder<br />
sprinkle of salt and pepper<br />

3-4 potatoes, peeled and halved</p>

<p>Coat the beef roast with the olive oil. Mix all the dried herbs, garlic powder, salt and pepper in a bowl. </p>
<p>Sprinkle the beef with the herbs mixture. Pour water on the Crockpot. Place the beef roast inside. Cover and set to cook on either low or high settings. Low for 8-hour cooking and high for 4-hour cooking. Add the potatoes to cook in the last 2 hours of cooking. </p>
<p>Usually a roast is also accompanied by carrots so add some too of you like. </p>

I served it with brown rice, but it would taste equally good over white rice, noodles, or even a baked potato.
This recipe features  canned condensed soup which contains a lot of sodium. Slow cooking makes food taste saltier.
I suggest waiting until the dish is done before adding additional salt.

Phew!  I&#8217;m still not in the groove, still working out the kinks, but dinner was a no-brainer with this simple <strong>Cheesy Chicken and Broccoli dish</strong>that I threw together in the crockpot.</p>

<p><strong>Cheesy Chicken and Broccoli</strong></p>
<p>1 can Cheddar &amp; Broccoli condensed soup<br />
1 cup water<br />
4 chicken breasts (or boneless thighs)<br />
2 cups fresh or frozen broccoli<br />
1 cup milk (use less if you&#8217;ve got a lot of cooking liquid left. You want to make a creamy, but not soupy sauce).<br />
Place chicken in the bottom of your crockpot, followed by the broccoli, then pour the soup mixed with the water over the top. Cook on high for 3-4 hours or on low for 6-8. Stir in 1 cup milk during last hour of cooking. Serve over rice. Use salt and pepper to taste.</p>

I don&#8217;t know about you, but without my crockpot there are some days when my family would not have a hot meal.  I&#8217;ve used my crockpot for a long time, and when I was single it was nice to come home to hot dinner just waiting for me.  Now that I cook for my husband and mom, I especially appreciate the ability to &#8220;cook&#8221; dinner without having to do more than just throw a few items into the machine.

<p>I have several crockpot cookbooks now, but I tend to shy away from those that require any prep work.  Call me lazy, but I can&#8217;t see frying up meat and onions or whatever, and then throwing into the crockpot.  I want to throw it all in, and walk away.  That&#8217;s it. </p>

<p>Lately, I&#8217;ve finally discovered that you can cook rice (and pasta) in with your meal as well.  (You guys probably already knew that!  I&#8217;m slow sometimes&#8230; <img src='http://www.blisstree.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   I can&#8217;t tell you how delighted I was to learn that!  It meant I could truly make a one pot meal right in the good ole slow cooker.</p>
