I had to do it from memory, but this time I used the crockpot. It may be like the one you make, but if not, perhaps you’d like to give it a try.

1 pound of hamburger, cooked and drained

1 onion, diced

1 green pepper, diced

1 can of beef broth

1 can of diced tomatoes (including juice)

1/2 c. water

2 Tablespoons ketchup

1 teaspoon salt

1/2 teaspoon pepper

2 cups vegetables of your choice (I used corn, green beans, a couple baby carrots, and peas.) I added these in amounts my family likes. For example, less baby carrots and more corn. You can adjust this to the amount of veggies you have on hand or what your family likes.

Put everything except the salt and pepper into the crockpot and cook on high for 3 hours or low for 6-7 hours. About an hour before serving, add the salt and pepper.

Beef Stew with Sweet Potatoes
This recipe uses sweet potatoes, which give it a hardy, sweet flavor.

Company Casserole Recipe
This recipe is on the order of a jambalaya type of dish that includes chicken with shrimp. You can also add sausage if you’d like. It’s a nice “put it on and forget it” type of recipe. You can also let it stay hot so people can have bits while the game is on.

Black Bean and Pork Tenderloin Slow Cooker Chili
The pork and black beans are a great combination of flavors in this dish.

Heavenly Ham Casserole
This is an especially great recipe if you’ve got leftover ham to use up. It works well on a cold day – perfect for football weather!

Hamburger Vegetable Soup
I love the combination of hamburger and veggies, and this soup makes for a nice half-time treat!

Chocolate Peanut Butter Chip Cake
I don’t often make dessert in the crockpot, but sometimes during a football game I’ll set this on because it will be done by the end of the game and makes the house smell great. At the end of the game, you can serve your guests a hot dessert without having to fuss.

I don’t know about you, but without my crockpot there are some days when my family would not have a hot meal. I’ve used my crockpot for a long time, and when I was single it was nice to come home to hot dinner just waiting for me. Now that I cook for my husband and mom, I especially appreciate the ability to “cook” dinner without having to do more than just throw a few items into the machine.

I have several crockpot cookbooks now, but I tend to shy away from those that require any prep work. Call me lazy, but I can’t see frying up meat and onions or whatever, and then throwing into the crockpot. I want to throw it all in, and walk away. That’s it.

I’ve come across a few good recipes for this, many of them from right here at b5. For example:

50 Awesome Crockpot Recipes to Keep You Warm and Full

and even, Crock Pot Creme Brulee

I created a recipe myself and can direct you to many more free crockpot recipes over at Simply Thrifty.

Lately, I’ve finally discovered that you can cook rice (and pasta) in with your meal as well. (You guys probably already knew that! I’m slow sometimes… I can’t tell you how delighted I was to learn that! It meant I could truly make a one pot meal right in the good ole slow cooker.

What’s your favorite crockpot meal? Is there a recipe online you can share? Or better yet, add it to the comments below!
