Sherry Shallot Cucumber Dill Salad

I caught this very yummy summer recipe quite by accident, but I can tell you it is fabulous. If you like cucumbers but aren’t always sure what to do with them, here’s one idea. You’ll take cucumbers, add dill, and then make a very easy dressing with shallots and sherry vinegar to top the whole thing with.
Here’s the recipe:

Dani starts off… “It sure is hot…” and then she provides us with a simple recipe that even I could make. And as I’m thinking about lunch at the moment, (trying to give up coffee makes you hungry??) this looks like it’s going to be it. A nice cool cucumber salad for one.
