Tomato Basil Bruschetta

One of my favorite, straight from the garden, flavors this time of year is basil. That’s why I’m excited about this Tomato Basil Bruschetta recipe from Dei Fratelli.
My basil plants are in overdrive right now. I’ve been trying to keep the flowers pinched off and keep them branching out and tender. I’m losing the battle. My basil is blooming faster than I can pinch off the blooms.

Black Bean n’ Corn Chicken Salad

I enjoy a good salad during the summer, and I really enjoy a salad with a spicy or southwestern flavor. Add this black bean and corn recipe from Dei Fratelli to a bed of lettuce, and you have a yummy quick and light southwestern lunch. I think I’d have to add a handful of corn chips to the top for an extra crunch!
If you’re serving your black bean and corn chicken salad to kids, serve it on a whole grain roll with greens or applesauce on the side. Yum!

You didn’t think I’d let Health Month pass by without reviewing at least one heart-healthy food, did you?
Right now I’m cooking up some low-sodium tomato soup using Dei Fratelli crushed tomatoes with No Salt.
That’s right. Zero salt, but I said I’m cooking low-sodium soup. Yeah, I added some salt, but I like it that way. I can control the amount of salt added. And believe me, it’s much less salt than typically comes loaded in canned products.
