<p><strong>Here&#8217;s what you need:</strong> 1 box of brownie mix (or you can create brownie mix from scratch), marshmallows, small ice cream cones, sprinkles</p>
<p><strong>Here&#8217;s what you do:</strong> Preheat the oven to 300 decrees Celsius. Prepare the brownie mix according to pack directions. Fill each cone halfway. It&#8217;s important to have space in the cone as the brownies will rise. Place in the oven for 20 minutes. Then take out the goodies and stuff each cone with a marshmallow. <p>You can also opt to put the brownie mix in, then the marshmallow, then top it off with more brownie mix. Then add sprinkles.</p>
<p><strong>Why not try cake mix as well? </strong>Try different kinds of cake mix – chocolate cake, angel food cake, coconut cake, strawberry shortcake… and stuff them into the cones. Experiment and see what cake-cone combination suits you best.</p>
<p><strong>It&#8217;s a little bit sweet, a little bit gooey, a little bit crunch and plenty fun to eat!</strong></p>

I recently had the opportunity to try out one of their Tortuga Rum Cakes, and they are heavenly, but I&#8217;ll write more about that another day. I just had to share this recipe with you.</p>
<p>I love coconut cream pie, and this recipe sounds like it would be wonderful for summer dinners, cookouts, or barbecues.</p>

<p><strong>Coconut Rum Custard Pie with Coconut Crumb Crust</strong></p>
<p><strong>Crust:</strong><br />
1 cup shredded sweetened coconut<br />
1/2 cup gingersnap crumbs<br />

1/4 cup melted butter or margarine<br />
4 large eggs<br />
1/2 teaspoon nutmeg</p>
<p><strong>Directions:</strong><br />
Preheat oven to 350. Combine all ingredients &amp; blend well. Press evenly over bottom &amp; up sides of 9 inch pie pan. Bake at 350 for about 5 minutes. Remove from oven &amp; chill.</p>
<p><strong>Filling:</strong><br />
1-1/4 cups milk<br />
1 cup coconut milk<br />
2/3 cup sugar<br />
2 teaspoons Rum Vanilla or 1 tablespoon Tortuga Light Rum<br />
1/2 teaspoon ground nutmeg<br />
1/4 teaspoon salt<br />
1/3 cup grated of finely chopped fresh coconut, toasted lightly</p>
<p>Preheat oven to 400. In medium mixing bowl, beat the eggs slightly with electric mixer or rotary hand mixer. On low speed, add the sugar, salt, Rum Vanilla or rum &amp; mix well.</p>
<p>Gradually stir in the milk &amp; coconut milk and blend well, scraping bowl with rubber spatula. Pour into the baked shell &amp; bake for 15 minutes, then reduce heat to 325 &amp; bake an additional 30 minutes, or until knife inserted in custard center comes out lean. Cool to room temperature &amp; sprinkle with toasted coconut.</p>

<p><strong>INGREDIENTS</strong> :<br />
4 ounces unsweetened chocolate, chopped into small pieces<br />

<p>Preheat oven to 350°. Grease a loaf pan lightly. Line it with baking parchment. </p>
<p>Melt the 4 ounces unsweetened chocolate. Set aside. </p>
<p>Beat eggs and sugar together in a mixing bowl until thick and creamy. Stir in sour cream and melted chocolate. Fold in the flour using a metal spatula. </p>
<p>Pour the mixture into the loaf pan. Bake for about an hour or until springy and firm to the touch. Cool it the pan for a fe minutes then turn onto a wire rack and cool completely. </p>
<p>Melt apricot preserves over gentle heat. Melt the other batch of 4 ounces unsweetened chocolate. Combine the apricot preserves with the melted chocolate. Stir in the sour cream. </p>
<p>Slice the loaf across into 3 layers. Spread 1/3 of the filling onto 1 layer. Repeat with the other layer then spread the remaining filling on top of the loaf. Add a little bit of apricot preserve on top as a decoration. </p>

		<description><![CDATA[I adore Pi Day&#8230;it&#8217;s one of the best excuses there is to eat something I love anyway. And since I&#8217;m married to my physicist sweetheart, there&#8217;s even more adoration for 3.14 in our household!  Here&#8217;s one of the pie recipes I love the most:

Blow Your Socks Off Sour Cream Apple Pie
Make a single batch of regular pie crust
Topping:
3 T butter, softened
1/3 c sugar
1 t cinnamon
2 T flour
Combine in a small bowl and blend with a fork until the mixture is grainy. Cover and chill.
Filling:
4 c tart apples (I like Macouns), peeled, cored, and sliced thinly
1-1/3 c sour cream
2/3 c sugar

<p><strong>Blow Your Socks Off Sour Cream Apple Pie</strong></p>
<p>Make a single batch of <a href="http://realfoodfast.blogspot.com/2009/03/pi-day-how-to-make-pie-crust.html" target="_blank"><span style="font-weight: bold">regular pie crust</span></a></p>
<p><strong>Topping:</strong><br />
3 T butter, softened<br />
1/3 c sugar<br />
1 t cinnamon<br />
2 T flour</p>
<p>Combine in a small bowl and blend with a fork until the mixture is grainy. Cover and chill.</p>
<p><strong>Filling:</strong><br />

2 large eggs<br />

<p>Line the pie pan with the crust and add the apples. Mix the sour cream through the flour in a bowl, beating well. Pour over top of apples. Crumble the topping over the mixture. Bake at 350 for about an hour. Cover with foil if the crust starts to brown too much. Let it cool completely before serving. Swoon.</p>

Oh my God! Two days and it’ll be Christmas Eve. But family arriving Friday to complete our home, we couldn’t help for the feasts to start. I sort of &#8220;practiced&#8221; making Crema de Fruta to make sure that I make it right making on Christmas Eve. He he.
That was just an excuse of course, I just couldn’t wait.
