Shrimp Spinach & Zucchini Stir-fry

This is a simple seafood stir-fry using a bag of frozen shrimp. The $5 bag from Wal-Mart.
INGREDIENTS :
1 pack frozen shrimp
medium onion, finely chopped
3 cloves of garlic, finely chopped
thumb-size ginger, peeled and finely chopped
a bag of fresh spinach leaves
1 medium zucchini, sliced in flat rounds
2 tbsp soy sauce
1 tbsp hoisin sauce
olive oil for stir-frying (2-3 tbsp)
Family’s Favorite Lemon Chicken

One of my family’s favorite chicken dish is this lemon chicken that get a lot of compliments from my son who happens to be the picky eater in the family. This is one dish where I don’t have to tell him to finish his dinner. Another Epicurious recipe, this meal is a nice change of pace from yesterday’s heartier pasta dish. Instead of using chicken breasts with bones, I had some boneless ones in the freezer from a Sesame chicken dish last week. Again, a little bit more garlic was good here – and yogurt sauce was far tastier when there were two teaspoons of the spicy mixture of olive oil, paprika, cumin, and crushed.
