There are days when my brain sort of stops functioning and couldn’t for the life of me get things together. It usually happens when I wake up really late that I am just barely getting through all the tasks at hand. That’s when it’s hard to think of what to make for dinner. I work full-time and the last thing I want to do when I get home harassed from a busy day at the office is an elaborate family dinner. I can’t in good conscience order take outs all week long so I try to be a bit clever with my time.
