It was fabulous! So that’s what I’m making this year, too.

This makes a nice crunchy coating on the outside, but you have to use the right ham. The recipe recommends using a “smoked bone-in ham labeled fully cooked” which works best.

For the cheese, I use this brand of spreadable cheese in the garlic and herb variety. I’ve also experimented with the herb I use. The recipe calls for fresh parsley, but I’ve dried and it’s been just as good. I’ve also used the spinach and herb spice from Tastefully Simple and that has worked out very well.

Since it’s Sunday afternoon today (and we’ve just received a blanket of snow yet again!) I’m making an old favorite: Provencal Vegetable Soup from Ina Garten. I got this recipe out of her Barefoot Contessa in Paris cookout (which if you haven’t tried it yet is absolutely fabulous!)

The secret (in my opinion) is the Pistou that gets dolloped at the very end. It takes the flavors of this dish over the edge from good to great! The only suggestion I have if you try this recipe is that you really only need one fourth of the Pistou. Anymore and it was too much. (Again, a different of taste, but there you there.)

If you’re looking for a yummy recipe this Sunday afternoon, I highly recommend it!

Nonstick Cooking Spray
1 1/4 Cups Rice
Salt and Pepper

Spray inside of slow cooker with nonstick cooking spray. Salt and pepper pork chops to taste, and place in bottom of slow cooker. Place celery, onion, and mushrooms over pork chops. Pour both cans of soup over all. Cook on low for 7 1/2 hours or high for 3 1/2 hours.

If you’ve had the slow cooker on low, turn it to high. Add rice and mix ingredients in slow cooker. Cover and cook for half an hour more. Serve.
The recipe makes a rich, delicious sauce that compliments the pork chops perfectly. Watch out for bones, as pork will be well done. Serve rice mixture over pork chops and enjoy.
