Crustless Pumpkin Pie

I wanted to use some of the pumpkin I baked the other day to make some pumpkin pie, but I decided to skip the crust. The pumpkin is my favorite part, so I decided to make a crustless pumpkin pie.
It turned out delicious so I thought I’d share the recipe here. We topped the pumpkin pie with some TruWhip, which I’ll be back with a review of in the next day or so.
Crustless Pumpkin Pie
3 cups cooked pumpkin
1 can (12 oz) evaporated milk
1 cup sugar
2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
3 eggs (slightly beaten)
1 teaspoon salt

An Easy Fall Fruit Salad

My dad gave me a big bag of apples from his orchard the last time I was over there, so I’ve had plenty of apple dishes going on the last week or so. Today I wanted to make a fall fruit salad, so I combined apples, grapes, walnuts and yogurt. It turned out yummy so I thought I’d share the recipe here. You could probably add a little cinnamon for a little extra spice, but it’s good without.
Fall Fruit Salad
4 medium apples(peeled, cored, and chopped)
1 cup grapes (cut in half)
1/3 cup chopped walnut pieces

Pumpkin Pie Blondies

I saw several recipes for pumpkin blondies last year, but I didn’t get a chance to make them myself. Tonight I decided I would give them a try, so I dug in and browsed through quite a few recipes, both online and off. In the end I decided to combine a simple blondie recipe, with a pumpkin pie recipe and see what happened.

Healthy Easy Cinnamon Fruit Dip

Like I said the other day, this time of year we have plenty of apples on hand. They’re actually one of my son’s favorite after school snacks, cut up with a little peanut butter, or with a little of my favorite cinnamon fruit dip dolloped on top.
It’s a great fruit dip to get kids to eat some healthy fruit, and the dip itself isn’t unhealthy for them either. Instead of using it for a dip you can also make a fall fruit parfait by layering it in a glass with apples and walnuts, or cinnamon granola.

Fall Flavors~ Turkey Roll Ups

When the weather starts getting cooler I start craving fall flavors. Today I have several recipes that can blend together into one dish, or be used to create three different dishes. Turkey roll ups with the turkey itself as the roll, stuffing, and a homemade chicken stock.
You can use the stuffing and the chicken stock to make the turkey rolls, or have the turkey, and stuffing separate, and use the stock to make a hearty soup.
