Chicken Hungarian Goulash

I love goulash, almost every recipe I’ve ever tasted, and this particular rendition from Brenda J. Ponichtera looks to be especially healthy, even good for diabetic menus.  The dish is a complete meal if you so desire, or you can  add rolls to help sop up the tasty tomato sauce!

Chicken Hungarian Goulash
4 1/2 ounces ziti pasta, tube shape (1 1/2 cups uncooked)
1 pound skinless, boneless chicken breasts, cut into bite-size pieces
3/4 cup chopped onion
1 1/2 cups chopped green bell pepper
1 can (14.5 ounces) diced tomatoes, not drained*
1 can (8 ounces) tomato sauce*
1/2–1 tablespoon paprika
1 tablespoon dried parsley

Best budget easy family meals from Delish!

Delish has created a new page where you’ll find dozens and dozens of quick, healthy, and inexpensive meals for your family!  You’ll find quick and easy pasta, heart-smart entrees, slow cooker and one-pot specials, and even low calorie comfort foods.  Now that’s really worth checking into!  I found a recipe for tuna noodle casserole from Eating Well which I’m going to use to update our family fave.

Tator Tot Casserole

Believe it or not, I’m picky about my tator tot casserole dishes. I’ve tasted a few, and they have been awful. But this one, I really like. I got this out of an old church cookbook from about 1970! My family likes this dish a lot. Here’s what you need:

1 1/2 pounds ground beef (you can adjust this to what you have – I’ve used as little as a pound)
1/2 c. milk
1/2 c. oatmeal
1 egg, beaten
salt and pepper
Mix together and place in a 13×9 baking dish. Preheat the oven to 350.

March is National Nutrition Month

National Nutrition Month is a nutrition education and information campaign that focuses on the importance of making informed food choices.  It was created by the American Dietetic Association to be observed annually in March.
This March, Driscoll’s encourages you to make informed food choices by adding nutrient rich berries, such as blueberries, raspberries, blackberries and strawberries, to your daily diet.  What better food choice is there other than antioxidant-packed berries?  Don’t these look amazing?
