This sausage fried rice is a lighter or shall I say “paler” version of the smoked sausage fried rice I made for my daughter’s birthday party. I didn’t do all the hassles of putting the rice in the fridge overnight nor did I use soy sauce to season it. Like I said, it’s a lighter version and with a twist in the end by adding napa cabbage into it.
INGREDIENTS:
3 cups of long grain rice, cooked
oil for cooking
1 egg, beaten
2 smoked sausage, sliced
1 small onion, chopped
3 cloves of garlic, chopped
1 tsp of salt
sprinkle of black pepper
5 pieces of nappa cabbage, …read more

You can’t have an Asian theme dinner party without rice. Whether you want it as plain steamed rice or turn it into fried rice. With the latter, you can include a few items for added flavorings and “embellishments” to make it different from the last fried rice you made. For my daughter’s birthday dinner, I made fried rice with smoked sausage and cilantro.
INGREDIENTS:
3-5 cups of long grain rice, cooked (amount depends how big the party is)
oil for cooking
2 eggs, beaten
5 smoked sausage, sliced in rounds, diagonally
1 small onion, chopped finely
3 cloves of garlic, chopped finely
4 tbsp of soy sauce
sprinkle of …read more

When I say Chicken Fried Rice I don’t mean chicken strips, I mean fried chicken legs and thighs on fried rice. I love making this chicken fried rice because it’s a one-pot meal that everyone enjoys. The fried chicken is actually oven-fried chicken. There are a few steps to make this whole dish but the end result will satisfy everyone so enjoy.
INGREDIENTS :
4-6 pieces of chicken legs and thighs
2 cups flour
salt and pepper for seasoning
3-4 cups of cooked white rice
1 medium onion, chopped finely
3 cloves garlic, chopped finely
3 pieces of bacon, chopped finely
3 tbsp soy sauce

The other day I used some of the leftover vegetables from the vegetable tray I made last weekend to make a stir fry. I used brown rice and used my fried rice recipe to cook the rice. I picked up some chicken while I was at the grocery, then added several of the leftover vegetables from the tray, and an onion from my garden.
Chicken Stir Fry
1 lb chicken breast chopped
2 cups broccoli chopped
2 cups chopped carrot
1/2 medium yellow onion chopped
2 tablespoons extra virgin olive oil
light soy sauce
1/2 cup celery
I chopped and cooked the chicken in the olive oil. Then I …read more

Here’s a one-meal dish that’s cooked in one pot. Actually I cooked it in one wok. Fried Rice always has that quality if you’re creative enough to add a few more ingredients to make it into a 1 meal dish. That’s exactly what I did with this fried rice.
INGREDIENTS :
3-4 cups of cooked rice
1 bag of frozen shrimp
1 can of Spam, cubed
1/2 of medium onion, finely sliced
3 cloves garlic, chopped finely
1 green pepper, seeded and chopped
2 carrots, cubed
3-4 tbsp soy sauce
sprinkle of ground black pepper
sprinkle of saffron (optional)
oil for sautéing
Fried Brown Rice With Beef and Vegetables

I try to use whole grains, and fit in some vegetables whenever possible. This recipe uses both, whole grain brown rice, vegetables, and a little olive oil to fry the rice. Use a lean cut of beef , or skip the meat altogether.
It’s an easy rice dish. You can throw everything into the same pot, and prep time is about 10 to 15 minutes to chop the vegetables and beef. It does take about 45 minutes to cook the rice, but I can throw in all the ingredients, set the timer and forget it for a while.

Rainbow Fried Rice
Okay, I promise this will be my LAST fried rice post for a LOOOONG while. I just couldn’t resist, we had people over 2 weekends ago and to make the rice more interesting, I made this. Of course it’s really not my own invention, in the Philippines you go to parties and there’s always one version of this or another. I’ve also seen different recipes for “rainbow” fried rice in Thai, Chinese and Vietnamese cookbooks. I’m sure there are others. The point simply is to make the fried rice as colorful as you possibly can. …read more
