			<content:encoded><![CDATA[<p>I am going to be totally honest right now.  And once again in no way am I judging or belittling, but there are too many overweight children.  We had our first day of the school around my neck of the woods today, so I had to take my middle daughter to school for the first part of the day.  I was shocked by how many &#8220;obese&#8221; kids there were.  I am not taking about<img src="http://www.blisstree.com/files/78/2007/08/fat-kids.jpg" title="fat-kids.jpg" alt="fat-kids.jpg" align="right" /> big, strong, athletic, tall children, but very chunky, sweaty and fat kids.</p>
<p>I understand to a certain degree that genetics comes in to play.  My hubby is well over 6&#8242;5&#8243; and I am 5&#8242;9&#8243; so our kids are tall, strong girls, but they are not jiggly and out of breath from walking a flight of stairs.  And I also get that some families have to eat what they can afford which means pre packaged foods, sugar filled drinks and heavy carbs.  Shouldn&#8217;t we take responsibility for our children&#8217;s health though? How about canned fruits and frozen veggies with fish sticks, that is fairly healthy.</p>
<p>Overweight children are at a higher risk for developing diabetes and high blood pressure.  There has been plenty of research to prove it and is truly a &#8220;no brainer&#8221;.  I get very worried for these children and what their future will hold.  Will they be able to play sports or will they be too big to run up and down a field?  Will they be able to play with the neighborhood kids or will they be made fun of?  Not that has anything to do with diabetes, but it is a social concern.</p>
<p>We need to do our kids a favor and teach them nutrition and healthy habits.  No one is perfect and of course there will be happy meals at times, but not every day!  My 3 year old can even tell me the difference between healthy food and &#8220;fun&#8221; food.  And I absolutely think that moderation is key.  If you ban all things yummy, kids will want to eat them even more. Let them have a bit here and there and give them a strong foundation to grow on.  Obesity is scary, especially the amount of obese children.  Let&#8217;s do something about it!</p>

			<content:encoded><![CDATA[<p>Some of you may have seen my post last week about a cookbook, Diabetes Fit Food that I had reviewed and liked very much.  Well&#8230; I have a new one to tell you about!  I am a mommy and as you have deduced, I work part time as well.  So meal time can be utterly painful to say the least.  And what is easy is never, ever, ever diabetic friendly.  At least that is what it seems!</p>
<p>When that lovely bewitching 6 PM hour comes knocking at the door and the girls are staring at me in the kitchen chanting their dinner song and claiming that they are ready to melt into nothingness, as I am scrambling to get dinner on the table, I am not always the nicest mommy in the world.  I even recall saying 1 or 2 no- no words here and there.</p>
<p>But I have some good news to share.  Now this is not earth shattering, mind moving, ground breaking research, but it is a diabetic cookbook that provides over 200 recipes that are on the table in 30 minutes.  And they aren&#8217;t even lying!!  Uh huh, the recipes rock y&#8217;all!</p>
<p><img src="http://www.blisstree.com/files/78/2007/07/hollyclegg.jpg" title="hollyclegg.jpg" alt="hollyclegg.jpg" align="right" />The book is <em><strong>Helly Clegg&#8217;s trim and terrific Diabetic Cooking</strong></em> and it is endorsed by the American Diabetes Association.  She even offers tips on how to cut even more time off of prepping by using  pre-packaged items!  And she doesn&#8217;t even turn her nose up at using frozen veggies or canned salsa.  You gotta love a women like that!  And every recipe shows the diabetic exchanges and complete nutritional content of the dish that is being prepared.  Here is a sample&#8230;</p>
<p>Roasted Mexican Chicken</p>
<p>1 tbsp olive oil, 1 tbsp chili powder, 1 tbsp cumin, 1 tsp minced garlic, dash of cayenne pepper, salt and pepper to taste, 2 lbs of boneless skinless chicken breasts cut in half, 1 green bell pepper sliced, 1/3 cup chopped red onion, 1 tomato thinly sliced, 2/3 cup reduced fat shredded Mexican cheese</p>
<p>400 degrees, combine olive oil, chili, cumin, garlic, cayenne, and salt and pepper.  Add the chicken pieces and coat them well on both sides. . Transfer chicken to a baking sheet and top each piece with the green pepper, onion and tomato, bake for 25-30 minutes, sprinkle with cheese and serve!</p>
<p>Now, she presents it much nicer than I just did, but you get the drift.  Yummy is all I have to say!  And 3 carbs, 1 sugar, 152 calories, 5 g fat and 3 exchanges of lean meats.</p>
