Thanks to a holiday weekend spent in a country cabin, my Healthy Baking column is on a short hiatus, but I can make it up to you, I swear! It’s National Pancake Week, which means it’s time to batter up and get to the kitchen. Doug says: This is a delicious dish on a cold winter’s night (including Super Bowl Sunday). It’s high in iron and protein, and the recipe can be doubled to make some extra to have on hand. First, I’m not saying you’re a dummy. I’m just saying you might be a gluten dummy, and you might not even know it. (Plus, I’m a dummy when it comes to economics and transferring playlists to my iPod, so it’s okay. No judgment.) Even if you are a gluten dummy, you’ve probably noticed the invasion of gluten-free everything.
