Chicken Hungarian Goulash

I love goulash, almost every recipe I’ve ever tasted, and this particular rendition from Brenda J. Ponichtera looks to be especially healthy, even good for diabetic menus.  The dish is a complete meal if you so desire, or you can  add rolls to help sop up the tasty tomato sauce!

Chicken Hungarian Goulash
4 1/2 ounces ziti pasta, tube shape (1 1/2 cups uncooked)
1 pound skinless, boneless chicken breasts, cut into bite-size pieces
3/4 cup chopped onion
1 1/2 cups chopped green bell pepper
1 can (14.5 ounces) diced tomatoes, not drained*
1 can (8 ounces) tomato sauce*
1/2–1 tablespoon paprika
1 tablespoon dried parsley

Black Bean and Chicken Stew

Last night I tried a vegetarian stew recipe from Martha Stewart. The only trouble was, my family doesn’t really like vegetarian recipes. So instead of doing the whole thing veggie style, I cut the amount of beans in half and added chicken. I also changed up a few things to make the dish more mainstream.

One thing I love about the dish is that it’s very easy to prepare. I think it took me about 45 minutes from start to finish. Here’s my revised recipe:

Today, in my GOOP newsletter, I found an online cooking show called the Tamra Davis Cooking Show.  Tamra Davis is a filmaker and a busy mom. 
This is a great resource for people who eat meatless (many meat-free recipes) or are just looking for a way to feed their families creative healthy meals. The shows are fun to watch as they follow Tamra shopping with her cute little boys, or doing yoga while one of the boys keeps climbing on her, and then there’s the food.  Yum.
