Prepare a box of Orzo- set to side to let cool
Chop up 2 carrots 1 small purple onion and 1/2 frozen box of spinach
Prepare chicken breasts- grilled or baked- cut up into pieces and set aside to cool
Mix together all veggies and 1 pack of feta cheese

			<content:encoded><![CDATA[<p>Here is a recipe for you- thanks to a fellow nurse!</p>
<p><strong>Feta Chicken and Orzo</strong></p>
<p>Prepare a box of Orzo- set to side to let cool</p>
<p>Chop up 2 carrots 1 small purple onion and 1/2 frozen box of spinach</p>
<p>Prepare chicken breasts- grilled or baked- cut up into pieces and set aside to cool</p>
<p>Mix together all veggies and 1 pack of feta cheese</p>
<p>For seasoning and dressing- 4 oz. Balsamic Vinegar and 6 oz. Olive Oil- 2 cloves of garlic chopped, 1/2 tsp oregano, 1/2 tsp basil, salt and pepper to taste, 1 tbsp sugar. Mix all together and mix in Orzo, veggies and chicken. It will be a chilled/cool meal and it is good!!</p>
