Here’s the thing about healthy food: there’s a market for it. That’s what Nicole Culver found when she started looking to grow her small online bakery, Pure Bliss Eats, which makes gluten-free, vegan, and other specialty snacks out of real ingredients. Unfortunately, all the labels don’t come easily or inexpensively, and, as a result, many of the small businesses who are making good stuff that consumers want get edged out by larger companies, who gussy prefer to gussy up junk food than make actually healthy stuff.
