When I’m working I don’t like to stop and take time to prepare lunch. On the other hand we don’t always have leftovers I can heat up, and I don’t like to rely on frozen prepackaged meals. So I’m always on the lookout for easy, quick, and nutritious lunch ideas.
One of my favorite tricks is to make some black bean and corn pico de gallo ahead on the weekend, or one evening while I’m cooking supper. Then I have it in the fridge, ready to throw on wraps, salads, or one of my favorites vegetarian tostadas.

Quick Lunch~ Black Bean Corn Avocado Wraps

I like to make quick easy lunches while I’m working, but I don’t like to rely on frozen dinners, or boxed meals. I like to make something fresher if I can. One of my favorite things to do for lunch is to take a flour tortilla and make a wrap with whatever I have on hand.
Here’s how today’s wrap turned out. I have the instructions here to make one, but you can just as easily make 5 or 10:

I happened to turn on the TV yesterday just as Tyler Florence was on his Food Network show making a Cuban sandwich. I love Cuban food and sat down to watch. Let me tell you, the recipe looked fabulous!
