Orange Blossom Waffles with Mangos and Nutmeg Cream 
Ingredients:
Mango Preparation:
1 cup sugar
1/2 cup water
2 tablespoons Peach Schnapps Liqueur
1 tablespoon chopped mint or basil
2 mangos, peeled and sliced

			<content:encoded><![CDATA[<p>I love to make something special on the <strong>weekend</strong> for <strong>breakfast</strong>. I don&#8217;t always have time, but when I do I like to make some sort of <strong>pancakes</strong> (usually banana) or <strong>waffles</strong> (usually with little mini chocolate chips).  Netxt time I&#8217;m going to make something new and just a bit fancier, like these waffles from <a href="http://www.bnbfinder.com/Virginia/White-Post/Bed-and-Breakfast/Listing/18376/LAuberge_Provencale">L&#8217;Auberge Provencale</a>, in White Post, Virginia&#8230;&#8230;</p>

<p><strong>Ingredients:</strong></p>
<p>Mango Preparation:</p>
<p>1 cup sugar<br />
1/2 cup water<br />
2 tablespoons Peach Schnapps Liqueur<br />
1 tablespoon chopped mint or basil<br />
2 mangos, peeled and sliced</p>
<p>Bring 1-cup sugar, water, Peach Schnapps and herb to boil. Remove from heat, let cool to room temperature. Pour over sliced mangos and refrigerate.</p>
<p>Nutmeg Cream:</p>
<p>2 cups heavy whipping cream<br />
2 tablespoons sugar<br />
1 tablespoon grated fresh nutmeg</p>
<p>Whip heavy cream, 2 tablespoons sugar and grated nutmeg until soft peaks form. Refrigerate until ready to use.</p>
<p>Waffles:</p>
<p>1 cup flour<br />
1 teaspoon baking powder<br />
2 tablespoons sugar<br />
1 pinch salt<br />
1 cup milk<br />
1 egg<br />
1 oz peanut oil<br />
1 tablespoon orange blossom water   <br />
<strong>Directions:</strong></p>
<p>Pre-heat waffle iron. Mix flour, baking powder, 2 tablespoons sugar and salt together. In separate bowl, mix milk, egg, oil and orange blossom water. Whisk wet ingredients into dry ingredients whisk until well blended. Pour enough batter to cover waffle iron bottom, cook until golden brown. Batter should make 3 large waffles.</p>
<p>To Assemble:<br />
Take waffle and cut into three wedges, fan out on half of plate. Fan out 5 &#8211; 6 mango slices on other half of plate. Pour a little maple syrup on waffles and dollop a little nutmeg cream in center of plate. Garnish with sprig of mint or basil. </p>

I haven&#8217;t been a teenager for&#8230;well, let&#8217;s just say a while now, and I&#8217;d live in a place like this. The fellow who built this home is Corbin Dunn. The treehouse is resting in Redwood trees in California&#8217;s Santa Cruz Mountains. According to his website he built the home using, &#8220;Common sense and a lot of nails.&#8221; You gotta love the simplicity of that.

<p>This may not be your childhood treehouse but it&#8217;s also not one of those slick new treehouses you see in dream home planning books. It&#8217;s a more rugged and the furnishings well, did you see the title of this post? But personally I think that&#8217;s part of the charm.</p>

<p>On his site, Corbin says that if you moved the trees you would be able to see the ocean on a clear day. The above picture is what moved me to post this today.  It completely reminds me of life in Humboldt, California where I lived for for years. I loved it there and still do. I&#8217;d settle there permanently if only my family and friends would move there as well.</p>

<p>Corbin was only 15 when he built this. That&#8217;s very impressive. I don&#8217;t know about you but I sure wasn&#8217;t taking on projects like this at 15. <p>I think that with the fresh air, scent of redwoods, and the amazing views I could probably live in a place like this quite happily.</p>
