There are days when my brain sort of stops functioning and couldn’t for the life of me get things together. It usually happens when I wake up really late that I am just barely getting through all the tasks at hand. That’s when it’s hard to think of what to make for dinner. I keep rushing to get things done that I forget to plan what to cook. Boneless chicken breasts and a well-stocked pantry usually come to the rescue.

I had to that the chicken in the microwave of course and just combining herbs and sauce together in a bowl to use as a 15-minute marinade. Hence, this balsamic vinegar and sesame oil grilled chicken.

Balsamic Vinegar & Sesame Oil Grilled Chicken (Image @ Dexie Wharton)

INGREDIENTS:
4-5 boneless chicken breasts
1/4 cup of balsamic vinegar
1 tsp of sesame oil
1 tsp of Worcestershire sauce
1 tsp of soy sauce
sprinkle of pepper
sprinkle of Italian Seasoning
sprinkle of dried basil

No need to pound the chicken breasts. Just slice each breasts in the middle, equally so you’ll get 2 thin slices of chicken.

In a container ombine balsamic vinegar, sesame oil, soy sauce, Worcestershire sauce, pepper, Italian seasoning and dried basil. Don’t use too much sesame oil because the flavoring is really strong. So a little comes a long way.

Marinate the chicken with the marinade for 10-15 minutes. Grill each sides of chicken breast for 8-10 minutes.

This was a really fast dinner to make. You can make your sides while the chicken are marinating and grilling.

chicken pieces (quarters, legs or thighs)
1 cup of Italian dressing
1/4 cup of honey
2 tbsp Worcestershire sauce
2 tbsp of soy sauce
a sprinkle of red pepper flakes
water for par-boiling the chicken

Because you are grilling the chicken, you must par-boil them first. Par-boil the chicken pieces in water until fork tender. Par-boiling will prevent a burnt skin and raw meat. Drain the water once done par-boiling.

Put the chicken pieces in a large container.

Whisk together the Italian dressing, honey, Worcestershire sauce, soy sauce and red pepper flakes.

Pour the marinade on the chicken pieces. Coat both sides. Cover the container and let the chicken marinade for 3-4 hours or overnight.

Grill the chicken pieces on both sides. About 8-10 minutes on each sides.

Barbecue season is coming to a close, but I hope I’m not yet late in sharing this tip: marinate your meat before grilling to reduce formation of carcinogen compounds called heterocyclic amines (HCA) during grilling.
In a study published recently in published in the Journal of Food Science, scientists tested three commercial spice- containing marinade blends (Caribbean, Southwest, and Herb) on round beef steaks. The steaks were marinated for one hour and then grilled at 400 degrees Fahrenheit.
