‘Tis the season when gardens and farmer’s markets are filled with a bounty of fresh summer squash and zucchini. It’s delicious, but if you don’t get a little creative, it can also get really boring. We love it plain, cut in half, grilled with olive oil salt and pepper; but for Meatless Monday, we want to experiment with other summer squash recipes. More
