I plan on going for an early bike ride tomorrow morning, so I need something easy for my kids to eat. I found this recipe for Strawberry White Chocolate Muffins from the Glynn House Inn in Ashland, New Hampshire that features fresh strawberries. Luckily I have just enough out front in my garden, but if you don’t have fresh, substitute frozen. You can thaw them quickly by putting them in a colander and running cold water over them.

Country Cheddar Muffin

Here’s another recipe from Wisconsin Cheese using Cheese and other staple items you’ll find in your fridge and pantry. Sometimes all you really have to do is raid what you already have in your kitchen. You’ll be surprised of what you can make out of them.
Ingredients:
1 3/4 cups flour
1/3 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups (5 ounces) Wisconsin Sharp Cheddar Cheese, shredded and divided
1 cup milk
1 egg
3 tablespoons grainy mustard
6 tablespoons butter, melted
1 tablespoon fresh, mixed herbs, chopped, or 1 teaspoon dried, mixed herbs

The Wedgewood Inn, located in New Hope, Pennsylvania is known for their Cappuccino Chocolate Chip Mini-Muffins and after trying this recipe out last night, I now know why. Yum!

Cappuccino Chocolate Chip Mini-Muffins
Ingredients:
2 c all-purpose flour
1/2 c sugar
2 1/2 tsp baking powder
2 tsp instant expresso coffee powder
1/2 tsp ground cinnamon
1 c milk (scalded and cooled)
1/2 c butter (melted and colled)
1 egg, lightly beaten
1 tsp vanilla
3/4 c semi-sweet chocolate min-chips
