			<content:encoded><![CDATA[<p>Traditionally attention and efforts are dedicated to <em><strong>Thanksgiving</strong></em> dinner while little attention is given to brunch. I understand this because no one wants to be full for dinner.  In my family every meal is important during the holidays, from breakfast to the traditional dinner to the leftovers the next day.</p>
<p>I came across two great recipes courtesy of <em><strong>Nestle Raisinets </strong></em>that would be perfect for a Thanksgiving brunch. I should mention both recipes are on the sweeter side and would be perfect to have on their own with a great cup of strong coffee! You definitely don&#8217;t want to have a huge brunch before a huge dinner so these recipes will give you some great ideas on how to have a light yet celebratory start to your day.</p>
<p><em><strong>Cranberry Baked Apples</strong></em></p>

<p>I got really excited when I saw this recipe idea. Fall and Thanksgiving both remind of apple season and going apple picking with my family. Generally we made apple pie for dessert but this recipe is perfect to wake up to.</p>
<p><strong>Ingredients:</strong></p>
<p>6 baking apples</p>
<p>1 package (5.5 ounces) NESTLÉ Cranberry RAISINETS &#8211; Milk Chocolate-Covered Dried Cranberries</p>
<p>1/4 cup chopped walnuts or almonds</p>
<p>1 teaspoon ground cinnamon</p>
<p>1 1/2 cups cranberry juice</p>
<p><strong>Directions:</strong></p>
<p>PREHEAT oven to 350° F.</p>
<p>WASH and core apples (1 to 1 ¼ inches in diameter); remove peel from around the top. Place apples in baking dish.</p>
<p>COMBINE Cranberry Raisinets, nuts and cinnamon in small bowl; fill center of each apple with mixture. Pour juice around apples; cover loosely with foil.</p>
<p>BAKE for 35 minutes; uncover. Bake for an additional 10 minutes or until tender.  Place apples on individual serving plates and drizzle each with 3 tablespoons juice from baking dish.  Serve warm.</p>

Preparation Time: 10 mins<br />
Cooking Time: 45 mins</p>
<p>This could definitely be served for dessert but I think it would bring an exciting change to traditional brunch and breakfasts! Also, I don&#8217;t think it would be too filling.</p>
<p><em><strong>Cranberry Raisinets Oatmeal Bars</strong></em></p>

<p>My mom has always been a fan of oatmeal bars and usually not for dessert but in the morning. This little treat is festive and perfect for the holidays because of the cranberries and another light bite to start the day.</p>
<p><strong>Ingredients:</strong></p>
<p>Nonstick cooking spray</p>
<p>1 1/2 cups whole-wheat or all-purpose flour</p>
<p>1 teaspoon baking soda</p>
<p>3/4 teaspoon ground cinnamon</p>
<p>1/2 teaspoon salt</p>
<p>1 cup packed brown sugar</p>
<p>3/4 cup (1 1/2 sticks) butter or margarine, softened</p>
<p>1 1/2 teaspoons vanilla extract</p>
<p>1 large egg</p>
<p>1 3/4 cups old-fashioned oats, divided</p>
<p>1 package (5.5 ounces) NESTLÉ Cranberry RAISINETS &#8211; Milk Chocolate-Covered Dried Cranberries</p>
<p><strong>Directions</strong>:</p>
<p>PREHEAT oven to 350° F. Spray 13 x 9-inch baking pan with nonstick cooking spray.</p>
<p>COMBINE flour, baking soda, cinnamon and salt in small bowl. Beat sugar, butter and vanilla extract in large mixer bowl until creamy. Beat in egg; gradually beat in flour mixture. Stir in 1 ½ cups oats. Spread into prepared baking pan. Sprinkle with Cranberry Raisinets; press into dough.  Sprinkle with remaining ¼ cup oats.</p>
<p>BAKE for 20 minutes or until golden brown. Cool completely in pan on wire rack. Cut into bars.</p>

<p>It may a bit out of the ordinary but it definiately will make your holiday brunch one to remember. It&#8217;s a great way to say &#8220;there&#8217;s more where that came from&#8221;.</p>

<p>Fall is also when I start craving warm a warm bowl of oatmeal for breakfast. Especially with cinnamon! I have a recipe to share with you today from <a href="http://www.naturespath.com/"><strong>Nature&#8217;s Path</strong></a> that incorporates both of these fall favorite flavors. These oatmeal raisin bars are tasty and healthy at the same time.</p>
<p>I have to say I&#8217;m a huge Nature&#8217;s Path fan, I love their cereals, so I was excited when they sent me this recipe to share. Nature&#8217;s Path Cereals are organic, whole grain cereals, so they&#8217;re good for you and delicious at the same time.</p>

<p><strong>Oatmeal Raisin Bar</strong></p>
<p>Ingredients:</p>
<ul>
<li>4 pouches Nature’s Path® Multigrain Raisin Spice Instant Hot Oatmeal, uncooked</li>
<li>1/2 c. whole wheat or spelt flour</li>
<li>1/2 tsp. baking soda</li>
<li>1/2 tsp. baking powder</li>
<li>1/2 tsp. ground cinnamon</li>
<li>1/4 tsp. salt</li>
<li>1/3 c. packed brown sugar</li>
<li>4 oz. (1 stick) butter, at room temperature, plus more to grease pan</li>
<li>2 large eggs, lightly beaten or egg replacer</li>
<li>1/2 c. unsweetened applesauce</li>
<li>1/2 c. chopped walnuts</li>
</ul>
<p>Directions:</p>
<ol>
<li> Set oven rack in bottom third of oven and preheat oven to 350°F. Butter an 8&#8243;x 8&#8243; or 9&#8243;x 9&#8243; pan.</li>
<li>In a large bowl, combine oatmeal, flour, baking soda, baking powder, cinnamon, and salt.</li>
<li>In another bowl, use a fork to mash brown sugar into butter. Then use a rubber spatula to blend thoroughly.</li>
<li>Blend in eggs or egg replacer and applesauce.</li>
<li>Stir wet ingredients and walnuts into dry ingredients until all flour is absorbed.</li>
<li>Transfer batter to prepared pan and smooth off top. Bake for 10 minutes. Rotate pan. Continue baking until browned around edges and top bounces back when gently pressed, 15 to 20 minutes.</li>
<li>Set on a rack to cool completely. Run a knife along the edges. Cut cake in half. Then cut each half into 8 bars. Store in a well-sealed container for up to 5 days.</li>
</ol>
<p>These bars would be great for kids lunch boxes, or for after school snacks.</p>

I am a huge fan of breakfast. Breakfast fuels you for the day (or night) ahead and gives you more stamina than the quick cup of coffee and pastry grabbed on the go.  My favorite breakfast for busy mornings are those easy to hold in the hand and munch. At home we experiment (ok, I experiment, the family wonders what is next) with breakfast bars, cookies, and muffins. </p>
<p>Bars are the best if you want to make something ahead of time that you can just snatch out of the fridge on your way to work or school. Kids love them and they’re so easy to make! The following recipe uses oatmeal as a base. Oatmeal is great for these types of recipe because it is filling, good for you, and gives the bar stability.</p>
<h3> Oatmeal On The Go Bars</h3>
<p>* 1 cup raw sugar (turbandinio) or 2/3 cup honey<br />
* ½ cup vegetable oil<br />
* 1 teaspoon vanilla<br />
* 2 eggs or egg substitute<br />
* ½ cup whole wheat flour<br />
* ½ cup soy flour<br />
* 1 ½ cup quick cooking rolled oats<br />
* 1 cup nuts </p>
<p>Cream wet ingredients in a large bowl. Stir dry ingredients together until well mixed, then incorporated into creamed wet ingredients. Pour into a prepared 9&#215;13 pan, (oiled lightly). Bake for 30-35 minutes at 350 F. Cool on rack then cut into bars.</p>
<p><em>*Vegans: Substitute two tablespoons cornstarch mixed with two tablespoons water for the egg.</em><br />
<em><br />
* Fruit such as raisins and mashed banana make tasty additions. Experiment!</em></p>
