Grilled Skirt Steak W/ Caramelized Onions

I love caramelized onions. I don’t know how other people make it but my recipe is too easy that I sometimes amaze myself at that realization. Actually, I learned the recipe from my dear Mother-in-Law.
I could eat caramelized onions by itself but most of the times I add it in mashed potatoes. It’s really delicious. Sometimes I use it as a topper for grilled meat like this grilled skirt steak I made for dinner last night.

Spring is the best time to plant onion sets in the Midwest and Northeast. Look for these baby onions at garden centers and groceries in April. Choose marble-size onions that are firm, but haven’t yet sprouted.

Onion sets should be sown in direct sunlight (a place that gets at least six years of sun). Place the bulbs about 1 1/2″ to 2″ below the soil line and about 6″ to 12″ apart. Water well.

Flavonols Against Colorectal Cancer

Okay…here goes another news on flavonols from tea, onions, beans and apples. As suggested by findings of a new U.S. study, increased intake of such flavonols may reduce risk of colorectal cancer by as much as 76 percent.
Findings were published in this month’s Cancer Epidemiology Biomarkers & Prevention:
Analysis of data from a randomised dietary intervention trial showed that the overall class of flavonoid compounds was not associated with a risk reduction, but flavonols – a sub-group of flavonoids, did significantly reduce risk.

It may not be the best of combination, but a diet rich in onions, apples and berries may reduce the risk of prostate cancer by about 25%.
The flavonols found in foods such as onions, apples and berries is the one responsible for the said association.
Such were the findings of a multi-ethnic study conducted by a team from German Institute of Human Nutrition Potsdam-Rehbruecke.
