Corn & Potato Pancakes

When I think of potato pancakes I actually visualize shredded potatoes held together to form a flat round shape. Until I saw these Corn Potato Pancakes from Idaho potato.

Ingredients:
2 cups mashed Idaho potatoes (prepared according to package directions using half of a 22 oz. bag frozen Idaho mashed potatoes), or, used leftover mashed potatoes.
2 cups frozen corn kernels (thawed) or cooked corn cut off the ear
1 egg, slightly beaten
1 cup seasoned bread crumbs
1/2 cup canola oil (for frying)

Apple-Cinnamon Pancakes

Something fruity and crunchy are added into pancakes to make it interesting for breakfast. Besides making the basic recipe for pancakes, I had to make the apple-cinnamon filling separately.
INGREDIENTS : (pancakes)
* 2 cups flour
* 2 tbsp sugar
* 4 tsp baking powder
* 1 tsp salt
* 2 eggs
* 1 1/2 cups milk
* 1/4 cup vegetable oil or melted butter
* butter for cooking
* syrup
Apple Cinnamon :
* 2 medium apples (Granny Smith), peeled, cored, and cubed
* 1 tbsp brown sugar
* a pinch of nutmeg
* 1 tbsp of cinnamon powder
* 3 tsp butter

Chocolate pancakes are always a hit in my house. It’s really no surprise because chocolate is always a good thing and definitely a favorite in my household.
Using the same basic pancakes recipe from the orange marmalade pancakes I’ve shared before, here are the chocolate pancakes.

Orange Marmalade Pancakes

I love orange marmalade. If I could eat a jar of it in one sitting I would. But we all know that wouldn’t be healthy. So if I could incorporate it in dishes (orange marmalade bbq ribs) sometimes, I always do. Like these orange marmalade pancakes.
INGREDIENTS :

2 cups flour
2 tbsp sugar
4 tsp baking powder
1 tsp salt
2 eggs
1 1/2 cups milk
1/4 cup vegetable oil or melted butter
2 spoonfuls of orange marmalade
butter for cooking

How To Make Perfect Pancakes?

How can a seemingly intelligent person be so unfocused that she burned pancakes? If that person is me, it’s easy. It’s as if my brain sometimes goes for a little drive without me.
