Week Night Dinner Dates: Pasta Puttanesca

One of my favorite meals is pasta which I blame on all the years I’ve spent working in Italian restaurants. As a kid pasta to me was boring and that was because my mom only ever made spaghetti in tomato sauce (probably because I was picky). I’ll have you know she’s one of the best cooks I know (or does every kid say that).
When I discovered that you could make gourmet pasta I jumped for joy and thus began my quest to make amazing pasta dinners.

Baked Penne W/ Bacon, Chicken & Zucchini

I needed to use the last zucchini that I bought from the Farmer’s Market but not necessarily as a vegetable side dish for meat entrée. I felt like making a one-pot meal so I decided to incorporate the zucchini with a box of penne. A delicious Baked Penne With Bacon, Chicken & Zucchini was my masterpiece .
INGREDIENTS:
a box of penne, cook al dente
5 pieces of bacon, sliced in small pieces
2 boneless chicken breasts, cubed
3 cloves of garlic, chopped finely

Spinach-Ricotta Stuffed Jumbo Shells

Pasta dishes are great options for “meatless nights”. Doing the latter is actually a good practice in living green. I learned that from a guy on Oprah during her Earth Day show. I was happy to learn that my family is actually doing things that could save the planet earth. However little they are, they still matter.
Here’s a pasta dish that I hope you’d love and include in your own “meatless nights” days.

Let’s Make Chicken-Spinach Lasagna

People are surprised when I tell them one of my favorite dishes is lasagna. I’m guessing being Asian has something to do with it. I try not to make lasagna often though because as much as I love it, it’s a heavy meal and takes a lot of work. Well, for a busy mom like me anyway.
I alternate making 2 kinds of lasagna. The ground beef with spinach, tomato sauce and cheddar cheese and my “white” lasagna which consists of chicken, alfredo sauce and mozzarella cheese. For today, let me show you how I make the “white” chicken-spinach lasagna.

Baked Macaroni

Baked Macaroni

What to do when you want to spruce up a typical pasta with sauce dish? Top it with cheese and bake it. Hence, the baked macaroni.
INGREDIENTS :

1 box of elbow macaroni pasta, cooked al dente
1-2 pounds of groundbeef
1 jar of spaghetti sauce
a sprinkle of Italian seasoning (or dried oregano and basil)
2 tbsp sugar
1 cup of  shredded cheddar cheese
1 cup of shredded mozzarella cheese
