I think my vegetable garden is almost done for the season, tonight we have a frost alert so I gathered up most of the vegetables that are tender to the cold. I picked most of the peppers, the last of the tomatoes, a couple eggplant, and some watermelon that are just getting full size.
My tomatoes were a bit of a disappointment this year. I had 18 different varieties, some did well, but most did not. I think it’s because our summer was cool, and it never did get very warm.

What To Do With All Those Peppers?

My pepper plants are in overdrive right now. I have tons of bell peppers, banana peppers, and a few hot peppers starting to come on. So what am I going to do with all those peppers?
Freezing peppers is easy. I just cut the tops off, and take the seeds out, and throw them in freezer bags. Then later in the year I take them out a pepper at a time to use in stir fry, make southwest omelets, pizza, pepper poppers, or fajitas. Rainbow Fried Rice
Okay, I promise this will be my LAST fried rice post for a LOOOONG while. I just couldn’t resist, we had people over 2 weekends ago and to make the rice more interesting, I made this. Of course it’s really not my own invention, in the Philippines you go to parties and there’s always one version of this or another. I’ve also seen different recipes for “rainbow” fried rice in Thai, Chinese and Vietnamese cookbooks. I’m sure there are others.
