Strawberry Rhubarb Pie

I have a confession to make: I don’t like rhubarb. I’m not sure why, it could be texture thing (I don’t celery either), since the only way I can manage a few bites is if it’s combined with strawberries and cooked in a pie.

With strawberry season upon us, it’s fun to make the treats and desserts that only fresh strawberries can be part of, and tossing in some fresh rhubarb is also a nice addition for most people!

Coconut Rum Custard Pie

I have a yummy recipe for you tonight from Tortuga Rum. I recently had the opportunity to try out one of their Tortuga Rum Cakes, and they are heavenly, but I’ll write more about that another day. I just had to share this recipe with you.
I love coconut cream pie, and this recipe sounds like it would be wonderful for summer dinners, cookouts, or barbecues.

Coconut Rum Custard Pie with Coconut Crumb Crust
Crust:
1 cup shredded sweetened coconut
1/2 cup gingersnap crumbs
1/2 cup graham cracker crumbs
1/4 cup melted butter or margarine
4 large eggs
1/2 teaspoon nutmeg

There is nothing better than a fresh berry pie during the summertime. I don’t have just any old pie recipe for you, I have the winning Professional Best of Show pie recipe from the Pie Championship. Pie just doesn’t get any better than that! And it’s just in time for prime summer berry season.

TOM’S CHEERY CHERRY CHERRY BERRY PIE
Crust:
1 ½ cups of flour
¼ tsp baking powder
½ tsp salt
1 tsp sugar
½ cup Crisco shortening

I adore Pi Day…it’s one of the best excuses there is to eat something I love anyway. And since I’m married to my physicist sweetheart, there’s even more adoration for 3.14 in our household!  Here’s one of the pie recipes I love the most:

Blow Your Socks Off Sour Cream Apple Pie
Make a single batch of regular pie crust
Topping:
3 T butter, softened
1/3 c sugar
1 t cinnamon
2 T flour
Combine in a small bowl and blend with a fork until the mixture is grainy. Cover and chill.

South Beach Check-In: Week 5

Another week on the South Beach diet, but no pounds lost…
I have a net loss of 0 pounds for the week. I actually lost a pound early on, but was dehydrated and by rehydrating I put it back on. I’m trying to stay hydrated to prevent that from happening again.
Exercise-wise, I’ve been slacking. I only went to yoga once this past week, and didn’t make it to the gym, although my job keeps me on my feet. (I used this as an excuse to “just come home and rest”). I’ll try to do better this week and see what happens.
