It’s Eat What You Want Day!

Seriously! If you look it up, May 11, 2009 is Eat What You Want Day.
This brings me to what I think is the perfect food. When I was pregnant, all those years ago, I tried to convince my obstetrician that I had the perfect snack for a pregnant woman: A banana split.
Seriously!
Look at it this way. You have your banana. Brunch Recipe: Lobster Frittata

Here’s something special for Sunday Brunch from A Cardinal House in Glastonbury, Connecticut.
Mini Lobster Frittata with Pineapple Mango Salsa  
MINI LOBSTER FRITTATA
(Makes four Frittatas)

• 8 oz Lobster meat, Knuckles and Claws, chopped
• 4oz cream cheese
• 6 eggs, whipped
• tsp chives, chopped
• Salt and pepper to taste
PINEAPPLE MANGO SALSA
• 8oz fresh pineapple, finely diced
• 4oz fresh mango, finely diced
• TBS finely diced red bell pepper
• tsp chopped fresh cilantro
• TBS vegetable oil
• Salt and pepper to taste

Sweet Fruity Structures

Sponge Bob isn’t the only one who gets to live in fruit. Although, his house is the only fruity home under water that I know of.
There is another pineapple house. Or rather, extra large pineapple structure.

No windows though. Probably solid through and through.
If you don’t have room for a mansion like this, or the ability to breathe under water, you can always do something with your yard that reflects your tropical fruit side.  All you need is a lot of yellow flowers and some patience.
