Soy Chorizo Slow Cooker Chili

Yesterday, I talked about Trader Joe’s Soy Chorizo. If you haven’t tried soy chorizo before, it’s a good product. It’s much lower in fat than traditional meat chorizo. It has a lot of flavor and is very adaptable to many different recipes. It makes a great base for Vegetarian Chili.
If you were with me yesterday and you reserved some of the taco filling, then skip the filling recipe and go straight to the chili recipe.

Soy Chorizo Taco Filling

When I was a vegetarian, I noticed that some of the dishes that gave me heartburn in the meat-version, did not do so in the veggie version. A couple of examples would be vegetarian sausage, which is also much lower in fat than the meat-version and vegetarian chorizo. I love that stuff.

We are only a few weeks into school and my daughter is already a bit bored with her lunch. I worked in the 3 cafeteria for 3 years and I have a pretty good idea what might work. I know what kids like and what they are most likely to throw away.

Easy-Peasy Mexican Crockpot Chicken

I mentioned yesterday how much I love Mexican food. Over the years I’ve developed some tricks that help me to save time and money. One of these tricks is a Mexican Seasoning Blend that you can find here.
It’s simple and I throw it together with those inexpensive little packets of Chili, Cumin, and Oregano that you find in the Mexican foodsection of the supermarket. It’s got the addition of cocoa and masa harina for flavor and to thicken it a bit.
