			<content:encoded><![CDATA[<p>At home chefs, and fun loving foodies are invited to join Adam Gertler in the Hungry Jack ‘Use Up the Box’ Recipe and Essay Contest. Adam is challenging you to create and submit a photo and essay of your original or non-traditional recipe using Hungry Jack® pantry staples like potatoes, pancakes or syrup. There will be three grand prize winners who will each receive a year’s worth of free groceries! Sounds like a great prize to me.</p>
<p>The Hungry Jack ‘Use Up the Box’ Recipe Challenge Contest is open to US residents over 18 years of age, and will be judged on the following criteria: creativity, taste, ease of preparation, appearance, and nutritional balance.</p>

<p>So what recipes can you come up with using your Hungry Jack® Potatoes, Pancake Mix or Syrup? I have a yummy recipe from <a href="http://www.useupthebox.com">Hungry Jack</a> to get your creative juices flowing.</p>

<p><strong>Hungry Jack® Two Cheese Potato Gratin Recipe</strong></p>
<p>Ingredients:</p>
<ul>
<li> Crisco® Butter No-Stick Cooking Spray</li>
<li>2 cups Hungry Jack® Mashed Potatoes, Flakes</li>
<li>2 cups warm milk</li>
<li>1/4 cup butter, softened</li>
<li>1/4 cup Parmesan cheese</li>
<li>1 3/4 cups grated Swiss cheese, divided</li>
<li>1 1/2 tsps. garlic salt</li>
<li>4 large egg whites</li>
<li>Chopped chives or scallions, for garnish</li>
</ul>
<p>Directions:</p>
<ol>
<li> Heat oven to 350°F. Spray 12 muffin cups with no-stick cooking spray.</li>
<li>Combine potato flakes, milk, butter, Parmesan cheese, 1 cup Swiss cheese and garlic salt in medium bowl. Beat egg whites with electric mixer until stiff peaks form. Gently blend with spatula into potato mixture until thoroughly combined. Fill muffin cups 2/3 full. Top with remaining Swiss cheese.</li>
<li>Bake 16 to 18 minutes or until cheese is slightly browned. Cool 5 minutes. Remove from pan. Garnish with chopped chives or scallions.</li>
