Chicken Cacciatore

Chicken cacciatore is a classic Italian dish typically made with chicken, mushrooms, onions, garlic and various spices including thyme, parsley, and oregano and served over pasta or rice. It’s referred to as a “hunters stew” and in the past has also been know to be made with rabbit.
Though not traditional, more modern preparations of the dish include chopped tomatoes which results in a sauce instead of the gravy that the chicken on its own produces.

Fried Rice With Sausage & Cabbage

This sausage fried rice is a lighter or shall I say “paler” version of the smoked sausage fried rice I made for my daughter’s birthday party. I didn’t do all the hassles of putting the rice in the fridge overnight nor did I use soy sauce to season it. Like I said, it’s a lighter version and with a twist in the end by adding napa cabbage into it.

I’m so excited that it’s finally September! It doesn’t necessarily mean cooler weather where I’m at (that’s October), but I do like that it’s finally pulling out of the “dog days” of summer and that cooler nights and shorter days are on the way.

You can’t have an Asian theme dinner party without rice. Whether you want it as plain steamed rice or turn it into fried rice. With the latter, you can include a few items for added flavorings and “embellishments” to make it different from the last fried rice you made. For my daughter’s birthday dinner, I made fried rice with smoked sausage and cilantro.

When I say Chicken Fried Rice I don’t mean chicken strips, I mean fried chicken legs and thighs on fried rice. I love making this chicken fried rice because it’s a one-pot meal that everyone enjoys. The fried chicken is actually oven-fried chicken. There are a few steps to make this whole dish but the end result will satisfy everyone so enjoy.

My First Jambalaya

I’ve always wanted to make my own jambalaya but never tried to because it just looked like such a HUGE dish for a family of 3. We are now family of 4 and with busy work during the day, I figured the leftovers will serve as a perfect lunch for maybe about 2 days.

The best side dish for Mexican dishes like tacos or enchiladas is Spanish Rice. Here’s a basic recipe of Spanish Rice from AllRecipes.com that I followed. Try to add more seasoning like chile powder and paprika to suit your tastes.
INGREDIENTS:
* 1 tablespoon vegetable oil
* 2 cups uncooked long-grain white rice
* 1/4 onion, chopped
* 1 green bell pepper, chopped
* salt and pepper to taste
* 1 (14.5 ounce) can stewed tomatoes

According to a new study published online October 20, 2006 in the International Journal of Cancer (the official journal of the International Union Against Cancer or UICC), there is a significant link between high bread consumption and renal cell carcinoma and that eating a lot of pasta and rice may also raise the risk, while eating many vegetables may lower the risk.
