Smoked Sausage and Penne
adapted from Simple &#38; Delicious
1 lb penne pasta
1/2 cup finely chopped onion
2 Tb olive oil
1 lb smoked sausage, sliced into 1/2&#8243; slices
2 cans (14-1/2 oz each) Italian-style diced tomatoes
2 small zucchini, quartered and sliced 1/2&#8243; thick
1/2 cup frozen corn
1 cup water
1 tsp dried oregano
1/2 tsp dried basil
1 tsp chopped garlic
1/2 tsp pepper

<p><strong>Smoked Sausage and Penne</strong><br />
<em>adapted from Simple &amp; Delicious</em></p>
<p>1 lb penne pasta<br />
1/2 cup finely chopped onion<br />
2 Tb olive oil<br />
1 lb smoked sausage, sliced into 1/2&#8243; slices<br />
2 cans (14-1/2 oz each) Italian-style diced tomatoes<br />
2 small zucchini, quartered and sliced 1/2&#8243; thick<br />
1/2 cup frozen corn<br />
1 cup water<br />
1 tsp dried oregano<br />
1/2 tsp dried basil<br />
1 tsp chopped garlic<br />
1/2 tsp pepper</p>
<p>Cook pasta according to package directions. Meanwhile, in a large skillet, saute onion in olive oil under crisp-tender. Add the sausage, tomatoes, zucchini, corn, water, salt, basil, garlic and papper; bring to a boil. Reduce heat and simmer uncovered for five minutes, or until zucchini is tender.</p>
<p>Drain pasta, toss with sausage mixture. Garnish with Parmesan cheese if desired.</p>
