Roasted Butternut Squash Soup
Seasons 52 Restaurant Bar and Grill has brought us another great recipe, this time it is their take on butternut squash soup. I’ve actually never had butternut squash soup from scratch before so I don’t know if there is always apples in it! That just sounds strange to me! But I am intrigued because butternut squash soup is actually one of my all time favorite dishes. Unfortunately I’ve only ever had it in a restaurant, so I am definitely willing to try this one out at home!

This dish from Seasons 52 would be the perfect side to compliment roasted chicken, I think. I have to admit, I am not much of a cook, but I am a huge fan of food! There are some people that might balk at the idea of consuming an entire onion, but not me! I love them and I feel that they compliment meat dishes very well. And they are a great source of vitamin C, calcium and iron!

Roasted Acorn Squash
This dish is perfect for the fall. Squash really is the food of autumn and is great to have as a side to your Thanksgiving turkey. This recipe from Seasons 52 looks delicious and would go great with a cool glass of chardonnay.

1 ea Acorn squash
12 spritz Extra virgin olive oil
½ tsp Kosher salt
Pinch Black pepper, fresh ground
