I’m a huge fan of soup! The Easiest Chicken Soup Ever

This past weekend, most of my family was sick, including me. I wanted to make a pot of Chicken Soup, but I honestly could not stand up for very long. I figured that I would take my chances with a simple Crockpot soup method and it turned out great.

Every week my family and I make a new soup when we sit down to watch the Packer game. This week’s recipe was cream of wild mushroom soup from Ina Garten. Surprisingly, I am not a fan of mushroom soup, but I loved this version.

We found Portobello mushrooms for a great price at Aldi, then added cremini and button mushrooms. The recipe suggests shitake but we couldn’t find them. The button mushrooms added very little flavor, however, the Portobello mushrooms and cremini added tons.

I made a really easy chicken tortilla soup for supper tonight. I’m a big fan of tortilla soup, so I was excited to give this recipe from Aroma Housewares a try. Now that the weather is turning cooler I’m ready for more soups and I love it when I can throw everything into one pot and walk away to let it cook.

Feel Better Chicken Soup

Fall, in addition to being the time of year when the leaves change and the weather turns mild, is the beginning of Flu Season.
I’m sick. Not fever-sick, but I feel extremely yucky. I’m making up a batch of chicken soup right now. I always add extra chicken to my soup recipe. It makes a richer broth and there’s leftover chicken that I can use for another dish.

I’ve tried a lot of different recipes for curried carrot soup because my family loves that taste of curry. They also like soup. However, every time I made a recipe for curry carrot soup it either turned out like baby food or was completely bland.

I’ve tweaked a bunch of different recipes to come up with this one. Check it out:

2 T. olive oil
1/3 t. curry powder
5 carrots (small to medium), chopped
2 1/2 celery stalks, chopped
1 small onion, chopped
3 c. chicken broth
juice of half of a lemon
1/2 t. salt
