Chunky Minestrone

I’m still on a soup kick…. I made up a pot of Minestrone, using items that I already had around the house. I like a Minestrone because it’s one of those dishes that is easily adaptable. I can think of a number of variations, including adding items like turnips or potatoes. I’ve even read recipes that stirred a tablespoon of Pesto Sauce into the soup bowl just before serving.

This past weekend, most of my family was sick, including me. I wanted to make a pot of Chicken Soup, but I honestly could not stand up for very long. I figured that I would take my chances with a simple Crockpot soup method and it turned out great.

Salsa Soup – Gazpacho Recipe

This weekend, my friend, Jackie, was over and we drank a couple of Bloody Marys with spicy tomato juice. They were so good – like salsa with vodka in it. Ever since then, I’ve been thinking about Gazpacho, which has always tasted like salsa soup to me. Yum.

How Refreshing Is This?
If you’re like me, you might be done with summer menus — enough with the burgers, hot dogs and tuna steaks…I can’t even think about how many more ways to make potato salad.
But there is one summer star that needs special mention. Watermelon…there simply can not be anything more refreshing or lusty than a big ripe watermelon. (We’ve already covered the sublime Jersey tomato.)
I think if chefs would have an easer time pitching cold fruit soups, if they would just get over the posturing and called them what they are: slushies.
