I love this time of year, when spring greens are in season in my garden, and at the local farmers markets. You can get greens year round these days, but they’re just not as good as those fresh from the garden greens first thing in the Spring.
Spring greens are wonderful with a little homemade herbal vinegar, or mixed with some fresh spring herbs and tossed with vinegar and olive oil.
