Roasted Acorn Squash
This dish is perfect for the fall. Squash really is the food of autumn and is great to have as a side to your Thanksgiving turkey. This recipe from Seasons 52 looks delicious and would go great with a cool glass of chardonnay.

Ingredients:
1 ea Acorn squash
12 spritz Extra virgin olive oil
½ tsp Kosher salt
Pinch Black pepper, fresh ground
Procedure:
Wash acorn squash in cold water.
Cut squash in half.

How To Cook Spaghetti Squash

I’m a fan of spaghetti squash. I usually grow at least one plant of it in my garden. It’s a great substitute for real spaghetti if you’re trying to cut calories, or carbs. They’re not hard to prepare, you can bake them, boil them, or microwave them. However you decide to cook them make sure you pierce the skin, so the heat and steam can escape without the squash exploding.
