When I need a recipe like that, I usually pick a pasta salad.

<p>While I normally don&#8217;t like creamy, cold pasta salads, <a href="http://www.bettycrocker.com/recipes.aspx/chicken-parmesan-pasta-salad">this one from Betty Crocker</a> is delish!  It doesn&#8217;t have that heavy mayo taste, and also isn&#8217;t drenched in salad dressing.  The cooked chicken give it some depth, and the croutons and Parmesan topping make it really unique.  Also very easy to make.</p>

If you&#8217;re looking for a refreshing&#8211;and festive&#8211;beverage for your summer holiday picnic, this watermelon lemonade recipe, courtesy of the National Watermelon Promotion Board, fits the bill.  Add a little rum, vodka, or gin to make it an adult beverage.
Watermelon Raspberry Lemonade6 cups watermelon cubes (seeds removed)
¼ cup raspberries
1 cup water
1/3 cup sugar
½ cup lemon juice  
Place watermelon, raspberries and water in container of electric blender, cover and blend until smooth. Strain through fine mesh strainer into pitcher. Stir in sugar and lemon juice until sugar dissolves. Refrigerate until chilled, about 1 hour. Makes 4 servings.
