Baked Sweet Potato Fries

To go along with Hubby’s Black & Blue burger, I decided to make baked sweet potato fries. When I told him I’d bake the fries he was a little hesitant but said whatever I decide goes, of course. I just did not want to deal with grease that day. Besides, baking was the healthier way in cooking the sweet potatoes.
INGREDIENTS:
3 large sweet potatoes, washed thoroughly
2 tbsp olive oil
dried basil
dried parsley
dried oregano
garlic powder
paprika
salt and pepper

One of my favorite tricks to get a little vitamin A into my son is to make sweet potato fries. Actually I make a batch of fries that’s half regular potatoes and half sweet potatoes.
Simply peel your potatoes so you have half sweet potatoes and half regular potatoes. Slice into long thin strips. If you have a fancy spiral cutter you can make them extra fun. Let the kids help you toss the potatoes in a bowl with a tablespoon or two of olive oil, a little coarse salt, and some dried parsley or oregano. Spread them into a single …read more

Mmm, I love fries. The greasier and squishier they are the better and I used to love to dip them in a mixture of mayonnaise and ketchup. However, they aren’t exactly the healthiest fare and sometimes cauliflower just doesn’t cut it. In a burst of inspiration, I picked up some sweet potatoes at our local market.
