		<description><![CDATA[To go along with Hubby&#8217;s Black &#38; Blue burger, I decided to make baked sweet potato fries. When I told him I&#8217;d bake the fries he was a little hesitant but said whatever I decide goes, of course. I just did not want to deal with grease that day. Besides, baking was the healthier way in cooking the sweet potatoes.
INGREDIENTS:
3 large sweet potatoes, washed thoroughly
2 tbsp olive oil
dried basil
dried parsley
dried oregano
garlic powder
paprika
salt and pepper

Preheat the oven to 365°.
Cut the fried in thin strips. Peel them first if you prefer &#8216;e, that way. Leaving the skin on is good too.

<p><strong>INGREDIENTS:</strong><br />
3 large sweet potatoes, washed thoroughly<br />

dried parsley<br />

<p>Preheat the oven to 365°.</p>

<p>In a bowl, put the sweet potato fries. Drizzle 1 tbsp of olive oil. Sprinkle dried parsley, dried oregano, dried basil, paprika, garlic powder, salt and pepper. Mix everything together with your hands making sure everything is coated.</p>
<p>Using two cookie sheet pans, drizzle half a tbsp of olive oil on the pans. Brush the oil all over. Lay the sweet potato fries on top.</p>
<p>Bake it in the oven for 35-40 minutes. Ranch dressing is a good dip for Baked Sweet Potato Fries.</p>

<p>Serve these fries with fish sticks, or homemade chicken strips. Give them some light sour cream or ketchup to dip them in. They won’t even know you’re trying to get them to eat something healthy.</p>

I was going to make sweet potato fries in the oven, but decided that was too time-consuming, so I&#8217;ve been making pan fries. You can use Pam or extra virgin olive oil if you&#8217;re trying to make it healthy (I love my flavored olive oils). It seems to take about 10 minutes sauteeing them on medium to high heat (stovetops may vary, so watch them). I&#8217;ve adapted my &#8220;dipping sauce&#8221; to low-fat mayo mixed with pico de gallo &#8211; delicious!<br />
The main draw of sweet potatoes over regular potatoes is that they&#8217;re complex, instead of simple carbs. The breakdown for regular potatoes is &#8211; 278 calories for one large, and a whopping 55 net carbs. Sweet potatoes (one large) come in at 162 calories and only 30 net carbs. Yes, you need to be up on the carb ladder somewhat if you&#8217;re on an Atkins-like diet, but they&#8217;re a good addition to almost any diet.<br />
If you&#8217;re in the mood for something a bit sweeter, try <a href="http://www.calorie-count.com/recipe/8852.html">this recipe</a> for sweet potato casserole made with Splenda (although I&#8217;d leave out the margarine, and use butter or a healthy, flavor-free oil instead).</p>
